How to Make the Best Blueberry Pancakes
- Make the batter. In a large bowl, whisk together the flour, baking powder, sugar, and salt. Add eggs, milk, olive oil (or melted butter), and vanilla. Whisk until combined. Note that the batter will be lumpy. Gently fold in the blueberries.

- Cook the pancakes. Add a small piece butter onto a large skillet or griddle. and melt it over medium-low heat. Use a paper towel to rub it all over. Scoop out ¼ cup of batter and add as many pancakes as fit in the pan (I fit 3 on a 12-inch skillet). Cook for a couple minutes until small bubbles begin to form on the surface and the edges are set. Flip the pancakes over and cook for another 1-2 minutes until the other side has browned.

Top it all off with a drizzle of homemade cream cheese icing for the perfect summer treat. They are easy to prep and can be made ahead of time for freshly baked cinnamon rolls in the morning. A family favorite that is truly irresistible.

- It's a summer version of cinnamon rolls. - active dry yeast
- salt
- sugar
- milk

- cinnamon
- blueberries - I used fresh blueberries for the best results, but frozen blueberries will work as well.

How to Make the Best Blueberry Cinnamon Rolls
- Prepare the dough. In a large mixing bowl, whisk together flour, yeast, salt and sugar until evenly combined. Add in milk, butter and egg. Stir well with a spatula until no dry flour is visible. Make sure to scrape off any remaining flour on the sides of the bowl.
- Knead the dough. Transfer the dough mixture onto a clean and dry surface. Knead the dough for 5 minutes until it turns into a soft and smooth dough ball. Because of the high fat content (butter and milk) in this recipe, the dough is much easier to knead by hand and does not require a stand mixer.
- Proof the dough (first rise). Transfer the dough back into the mixing bowl, lightly grease the dough ball with a little bit of oil and cover with a lid. Let it rise at room temperature for 1 hour or until it doubles in size. Covering the dough with oil will help prevent the dough from losing moisture and drying out.
How to Shape Cinnamon Rolls
- Place the dough onto a lightly floured surface and use a rolling pin roll it out to a rectangle approximately 20x12-inches in size. Gently spread softened butter evenly over the surface of the rolled out dough.
- In a small bowl, whisk together sugar and ground cinnamon. Sprinkle the mixture evenly on top of the dough, and add blueberries evenly over top.
- Roll up the dough tightly into a log and pinch the edges on the end to seal. Use a knife or bench scraper to cut the log into 9 even, about 2 inches wide each. Arrange the rolls cut side up into a greased 8-inch square pan.

- Cover the pan with plastic cling wrap or enclose it completely in a large sealed ziploc bag. Let it rise (second rise) for 45 minutes or until the rolls almost doubles in size.

Bake the cinnamon rolls in a 350 F preheated oven for 30 minutes until golden brown and let it cool for 10 minutes.
How to Make Cream Cheese Icing
To make easy cream cheese icing, combine cream cheese, milk, honey, and confectioners' sugar into a medium mixing bowl. Mix well with a handheld mixer or a whisk, until the mixture becomes smooth. Drizzle the icing over the cinnamon rolls and serve.
Alternatively, you can also drizzle the rolls with a simple icing made with 1 cup confectioners' sugar and 2-3 tablespoons of water. Mix together until desired consistency is reached. Add more water as needed.

Storing and Freezing Instructions
- Make ahead instructions: Prepare the blueberry cinnamon rolls up to a day in advance, following the recipe up until the second rise. Then, allow the rolls to rise slowly in the refrigerator overnight and bake it the next day in a preheated oven for fresh cinnamon rolls in the morning.

To make these delicious and flavorful Vietnamese summer rolls with chicken, you will need the following ingredients:
- rice wrappers - these are the wrappers that hold the salad rolls together. Keep in mind that the texture and thickness of rice wrappers depends on the brand used. You might need to dip them in for a few more seconds to make them pliable, so refer to the package instructions. Once softened, you will have to work with them quickly as they can start to tear easily if sitting out for too long.
- noodles - you will need to use thin vermicelli rice noodles. These noodles are gluten-free and easily found in Asian grocery stores.
- chicken - you can use any leftover cooked chicken that you have. I use leftover Lemongrass Chicken Skewers or Pan-Fried Lemongrass Chicken for the most traditional Vietnamese flavor, but anything works. Try leftover rotisserie chicken or roast chicken.
- vegetables - Summer rolls are typically filled with julienned carrots and cucumbers. But feel free to use other vegetables that you have one hand. Cabbage, lettuce, and avocado are some other popular choices.
- fresh basil or cilantro
- peanut dipping sauce - made with a combination of hoisin sauce (or can substitute with black bean sauce), peanut butter, water, fresh lime juice, honey (or can substitute with sugar) and topped with roasted peanuts. You can also use store-bought peanut sauce if it is easier.

How to Make the Best Vietnamese Summer Rolls with Chicken
- Prepare the vermicelli noodles. Bring a pot of water to a boil over high heat and add vermicelli noodles. Cook for 2 minutes until soft. Transfer the noodles to a bowl with a strainer to completely drain out any water.
- Soften the rice wrappers. Fill a large shallow bowl with warm water, about 1 to 2 inches high. Take one rice wrapper at a time and quickly dip it into the warm water for one second, or according to package directions. Shake off excess water. The wrapper will start to soften and feel a bit sticky. Transfer the wrapper onto a clean dry flat surface.
- Assemble the summer rolls. Place some cucumbers and carrots in the center of the rice wrapper into a log shape, leaving 2 inches of space on each side. Top with about 2 tablespoons of vermicelli noodles, a few basil leaves, and 2-3 tablespoons of chicken.
- Roll the summer rolls. Roll the wrapper up tightly from the bottom but gently so that you don't tear it, rolling it up halfway over top of the noodles. Then fold over the left and right sides inward. Then continue to tightly roll the wrapper to seal the mixture inside. If the wrapper doesn't feel soft and pliable, apply some water to your fingers and to the wrapper to help it soften.

- Make the peanut sauce. Combine hoisin sauce, peanut butter, water, lime juice, and honey. Stir well with a spoon until smooth and uniform. Sprinkle some chopped roasted peanuts on top.

Recipe Tips and Tricks
- Keep the ingredients are dry. Make sure that the ingredients (especially the vermicelli, vegetables, and herbs) are fairly dry prior to wrapping. If you don't eat the salad rolls right away and you leave them out for a few hours, excessive water from the vermicelli noodles might cause the rice wrappers to disintegrate and break apart.
- Be patient. Don't be so hard on yourself the first time that you try to roll and wrap the summer rolls. It can take a few attempts before you get it right. I would suggest starting with less filling, and increase it once you get the hang of the technique.
- How to store summer rolls. Summer rolls are best served freshly made. Once they sit out for a few hours, excess water can cause the rice wrappers to break apart. If you have leftovers, I recommend storing them in an airtight container in the refrigerator for no more than 24 hours.
- Make extra peanut sauce. If you love the dipping sauce as much as I do, then I recommend making a double or even triple batch. You can use it to dip anything in it, such as Lemongrass Chicken Skewers or Chicken Satay Skewers. It's even delicious as a marinade, and goes really well tossed into noodles.

- Combine ingredients. In a large mixing bowl, combine all flour, baking powder, sugar and salt. Whisk together until evenly distributed and set aside. In a separate medium mixing bowl, whisk to combine milk, oil, egg, lemon juice and lemon zest.
- Pour wet ingredients into dry ingredients. Pour the wet mixture into the dry ingredients and mix together using a rubber spatula until just combined and no dry ingredients are visible. Do not overmix (overmixing will make the cake denser and firmer). Gently fold in the blueberries until they are evenly distributed.

- pita bread - you can easily pick up a batch of small pita bread from the store, or make your own homemade pita bread. It is a lot easier than you think.

- garlic yogurt sauce - use store-bought sauce or make your own with Greek yogurt, lemon juice, Dijon mustard, garlic, salt, and pepper. You can also substitute with tzatziki sauce or spread some hummus in the wraps.

How to Make the Best Chicken Shawarma
- Marinate the chicken. In a large ziploc bag, combine chicken strips with 1 tablespoon oil and all seasoning. Press air out of the bag and seal tightly. Press the seasoning around the chicken strips to coat. Let it marinate for 1 hour, up to overnight in the fridge. You can also marinate the chicken in a large mixing bowl and cover.
- Bake the chicken. Add and spread chicken evenly on a large parchment-lined half sheet baking pan in a single layer. Bake in a 400 F preheated oven for 15-20 minutes until fully cooked through and crispy. Remove the pan from the oven and let cool for 10 minutes.
- Air Fryer Instructions: To air fry the chicken instead, spread chicken evenly in a single layer in the air fryer basket and cook at 375 F for 10-12 minutes until golden brown and crispy. Shake the basket halfway during cooking to brown evenly.

- Serve. Serve chicken in pita bread with lettuce, tomato, cucumber and parsley. In a medium mixing bowl, combine all the ingredients for the garlic yogurt sauce and stir until smooth. Drizzle on top of the chicken shawarma and serve. You can also add tzatziki sauce instead or a spread of hummus in the wraps.

- Skewer. Thread the marinated shrimp onto skewers, adding 4-5 shrimp to each.

It's a trio of perfection.

If you are feeling adventurous and want to switch things up, you can also try substituting different berries or a berry blend with blackberries, raspberries, or strawberries.

- cornstarch - helps to thicken the blueberry layer so that it won't be mushy.
- ground cinnamon
You will also need measuring cups and spoons, mixing bowls, hand mixer (or stand mixer), 9-inch square baking pan, and wire cooling rack.

How to Make the Best Blueberry Oat Squares
- Make the crust layer. In a large bowl, use a hand mixer or stand mixer to cream together butter with brown sugar until light and fluffy. Add rolled oats, flour, vanilla, baking powder, and salt. Continue to mix until fully combined. The mixture will be slightly sticky. Transfer the mixture into a 9-inch square baking pan, and firmly press it in to create an even layer on the bottom.
- Make the blueberry layer. In a large mixing bowl, add all the ingredients for the blueberry layer (blueberries, sugar, lemon juice, and cornstarch). Gently toss to combine. Evenly distribute the blueberry mixture over the crust.
- Make the oat layer. In a shallow saucepan, melt butter over medium heat. Once melted, remove from heat and stir in oats, sugar, and cinnamon. Stir until fully combined. Sprinkle and evenly distribute the topping on top of the blueberry layer.
- Bake. Bake in a 350 F preheated oven for 30 to 35 minutes until lightly browned. Place on a wire cooling rack to cool down completely and cut into 9 even squares. Serve bluwberry oat bars its own or with a scoop of vanilla ice cream.

- Marinate the chicken. In a blender or food processor, add all marinade ingredients (vegetable oil, soy sauce, fish sauce, sesame oil, brown sugar, garlic, lemongrass, and onion) and mix for 1 minute until smooth. Place cubed chicken into a large mixing bowl and pour the marinade on top. Toss well to coat. Cover and refrigerate for at least 1 hour (or overnight for the best results). You can also store the marinated chicken in a sealable ziploc bag.

- Skewer the chicken. Thread 4-5 pieces of cubed chicken on each skewer.
- Cook the skewers. You can grill, bake, or air fry the chicken skewers.
- To grill the skewers: Lightly apply cooking oil over chicken skewers using a cooking oil spray or silicone brush. Preheat the grill over medium-high heat for 3 minutes until sizzling hot. Place the skewers evenly apart on the grill pan and grill for 8-10 minutes on each side, or until the internal temperature of the chicken reaches 165 F. Do not overlap the skewers at any time to ensure even cooking for all the skewers.
- To bake the skewers: Preheat the oven to 425 F. Place the marinated chicken skewers on a parchment-lined baking sheet or on a lightly oiled roasting rack in a baking pan. Bake for 15 minutes until golden brown and the internal temperature for the chicken reaches 165F. Turn on the broil function on the oven on high and broil for 2-3 minutes until nicely charred on the edges.
- To cook in the air fryer: Do not thread them and place about 10 cubed chicken pieces in the air fryer basket at a time. Cook at 350 F for 25 minutes, shaking the basket halfway through. You won't get the charred grill marks but they taste amazing and so tender.

How to Make Peanut Dipping Sauce
In a medium mixing bowl, combine hoisin sauce, peanut butter, water, lime juice, and honey. Stir well with a spoon and and mix until sauce is smooth and uniform.
Once the chicken is cooked, let it rest at room temperature for 5 minutes. Serve warm with peanut dipping sauce and garnish with green onions.

- Make the fish sticks. Prepare Homemade Fish Sticks and place on a parchment lined quarter sheet baking pan and apply cooking oil spray evenly over each stick to coat. This creates golden brown crusts during baking. Bake in a 400 F preheated oven for 15 minutes until fully cooked through and golden brown. For store bought frozen fish sticks, bake according to package instructions.
- Make the mango salsa. In a medium bowl, combine mango, bell pepper, red onion, jalapeño, and cilantro and stir until evenly mixed. Drizzle with lime juice and toss well to coat. Let the Mango Salsa sit for 5-10 minutes to allow all the flavors to infuse into each other.
- Heat the tortillas. Heat the tortillas according to the package instructions, or heat in an ungreased skillet over medium-high heat for 30 seconds per side. You can also heat it directly on a gas burner for a few seconds to get char marks on the edges.
- Assemble the tacos. Slice each fish stick into ½-inch pieces and add onto each tortilla. Top with mango salsa, a drizzle of sour cream or lime crema, and a squeeze of lime juice to taste, and serve.

To make this easy lemon blueberry bread, you will need the following ingredients:
- all-purpose flour
- baking powder
- granulated sugar - you can also substitute this with brown sugar.
- salt
- milk
- oil - any vegetable oil will work. I typically use avocado oil or melted coconut oil. You can also substitute with melted butter for a more buttery taste.
- egg
- vanilla extract
- lemon
- blueberries - I recommend fresh blueberries for this one.
- lemon glaze - icing sugar and lemon juice (this is optional, for drizzling on top for a little extra sweetness).
You will also need measuring cups and spoons, mixing bowls, and a 5x9-inch loaf pan (1 lb. loaf pan).

How to Make the Best Lemon Blueberry Bread
- Combine ingredients. In a large mixing bowl, combine the dry ingredients including flour, baking powder, sugar, and salt. Whisk together until evenly distributed and set aside. In a medium mixing bowl, whisk well to combine the wet ingredients including milk, oil, egg, vanilla extract, lemon juice, and lemon zest.
- Add wet ingredients to dry ingredients. Pour the wet ingredients into the dry ingredients and mix together using a rubber spatula until just combined and no dry ingredients are visible. Do not overmix (overmixing make the bread denser and firmer). Fold in 1 cup of blueberries until evenly mixed.
- Prepare loaf pan. Lightly grease a 9x5-inch loaf pan (1 lb. loaf pan) with cooking spray oil, and pour the batter inside. Add the remaining ½ cup blueberry on top.
- Bake. Bake in a 350 F preheated oven for 55 minutes until golden brown and a toothpick inserted into the center of the cake comes out clean. Let cool for 10-15 minutes, then invert to remove the loaf.

How to Make Lemon Glaze
In a small bowl, add icing sugar. Slowly add in lemon juice and continually stir until smooth and desired consistency is achieved. The icing should be thick but can still be poured. If the icing is too runny, add more sugar. If it is too thick, add some more lemon juice. Evenly drizzle glaze over the lemon loaf and allow it to set and dry before slicing the loaf. To completely coat the loaf, then double the amount of icing.

- Do not overmix the batter. Overmixing will cause your bread to become denser, chewy or gummy, so be careful to mix just until everything is incorporated.
- Enjoy it warm or at room temperature. You can enjoy lemon blueberry bread warm or at room temperature. There's nothing better than a fresh fruit loaf right out of the oven. I usually can't wait and enjoy it hot.
- How to store. The best way to store this loaf is at room temperature in an airtight container or large ziploc bag or up to 2-3 days. This will keep the loaf fresh and moist. To store longer, store in the refrigerator for up to 1 week. Wait until the loaf has cooled down to room temperature before storing in the refrigerator to avoid it from getting soggy.
- How to freeze. You can also freeze this blueberry loaf for up to 3 months, wrapped tightly in plastic wrap or in an airtight container.

- Make the sauce. In a medium mixing bowl, combine sour cream, mayonnaise, garlic powder, cilantro, lime juice, lime zest, paprika, salt, and pepper. Stir well until smooth and evenly mixed. Set aside for 10 minutes, allowing the flavors to infuse into each other.
- Grill the corn. Place the corn on a preheated grill at 400 F and grill for 6-8 minutes, turning occasionally until nicely charred and cooked through. Set aside on a plate.
- You can also roast the corn in the oven at 400 F for 25 minutes or cook in boiling water for 10-15 minutes. However, grilling yields a sweeter and creamier taste.
- Assemble and serve. Spread and brush the sauce evenly over the corn and top with Parmesan. Drizzle with extra lime juice if desired
Storing Instructions
Mexican street corn is meant to eat fresh off the grill, so I wouldn't recommend preparing the elote in advance. You can prepare the sauce in advance and store in the refrigerator until ready to spread on the corn. If you do happen to have leftovers, I would suggest storing the corn separately and assembling when it is ready to serve.

- Assemble galette. Fold up the edges over the filling, all the way around. Carefully transfer the galette onto a parchment-lined quarter sheet baking pan. Apply egg wash over the folded over edges and sprinkle with brown sugar.

- Bake and serve. Bake in a 400 F preheated oven for 25 minutes until the crust turns golden brown. Let rest for 15 minutes then slice and serve warm with vanilla ice cream, if desired.

- chicken breasts - I recommend using boneless and skinless chicken breasts. If using bone-in chicken breasts, you will need to increase the cook time.
- olive oil
- lemon juice
- garlic
- herbs - a combination of fresh parsley, dried oregano, and dried mint. You could substitute the dried mint with dried dill or rosemary as well.
- paprika - this can be optional. It adds subtle flavor as well as a nice color to these chicken breasts.
- salt and pepper

How to Make the Best Baked Chicken Breast with Greek Souvlaki Marinade
- Prepare the marinade. In a medium mixing bowl, mix together olive oil, lemon juice, garlic, parsley, oregano, mint, paprika, salt, and pepper.
- Marinate the chicken. Place chicken breasts a large shallow bowl and pour the marinade over top. Toss chicken in the marinade to ensure that they are fully coated. Cover the bowl with plastic cling wrap and place in the refrigerator for 1 hour to allow the chicken to marinate.
- Bake. Preheat oven to 450 F. Place chicken on a quarter sheet baking pan and bake for 20-25 minutes, until chicken is no longer pink inside and the internal temperature reaches 165 F in the thickest part of the chicken breast (as read on a meat thermometer). Remove the chicken out of the oven and let it sit for 5 minutes before serving.

Ground beef stuffed peppers are a classic meal that are delicious, wholesome, healthy, and filling. Crispy and crunchy bell peppers are tender inside, stuffed with a savory ground beef, rice, and veggie mixture, and are topped with melty cheese. This family favorite meal is easy to make ahead and freezer-friendly.

Why You'll Love Ground Beef Stuffed Peppers
- Stuffed peppers are the best dinner. We loved stuffed peppers over at our house. Whether they are Vegan Stuffed Bell Peppers, Leftover Turkey Stuffed Peppers, or Ground Beef Stuffed Peppers, they're always a big hit. I mean they are rich in flavor and texture and are just more exciting than your run-of-the-mill dinner.
- Great for meal prep. Ground beef stuffed peppers are easy to make ahead, freeze and reheat well. You can prepare the entire stuffed pepper in advance or just the filling and assemble when ready to bake.

- bell peppers - tops removed and seasoned with salt and pepper. Feel free to use any color of bell peppers that you have on hand. Look for peppers that are large and round and easy to stuff.

- zucchini - you can substitute with other vegetables that you want to. Some of my favorites include carrots, peas, broccoli, and mushrooms.

- cooked rice - I used white rice, but feel free to substitute with brown rice. Since we are using cooked rice, this won't affect the cook time of the filling or stuffed peppers at all.

You will also need measuring cups and spoons, shallow saucepan or skillet, and 9x13-inch casserole pan.

How to Make the Best Ground Beef Stuffed Peppers
- Prepare the bell peppers. Cut the tops of the bell peppers off. Remove and discard the seeds. Place the peppers on a lightly greased 9x13-inch baking pan and lightly season with salt and pepper. Set aside.
- Cook the beef. Heat oil in a large skillet or shallow saucepan for 2 minutes over medium-high heat until the hot oil sizzles. Add ground beef and stir well to cook for 6-8 minutes until browned on all sides. Make sure to break up beef into small pieces to help even browning.
- Make the beef filling. Stir in onion, garlic, zucchini and parsley and sauté for 1-2 minutes until tender. Season the beef mixture with salt and pepper and stir in soy sauce and tomato sauce. Stir occasionally and bring the mixture to a simmer to help soak up the flavors, about 3 minutes. Add in rice and ½ cup cheese and stir well to mix all evenly. Turn off heat and set the beef rice mixture aside.

- Stuff the peppers. Fill up each pepper with beef mixture and sprinkle remaining cheddar cheese on top.

- Bake. Bake the ground beef stuffed peppers in a 375 F preheated oven for 40-45 minutes until the pepper softens and the melted cheese turns golden brown. Let the stuffed peppers rest for 5 minutes before serving. Garnish with fresh parsley on top and serve.
Storing and Reheating Instructions
- How to store: Let leftovers cool down before placing them in an airtight container and store in the refrigerator for up to 3 days.
- How to freeze: stuffed peppers also freeze and reheat well. So they are perfect for meal prepping. Store the cooked stuffed bell peppers (or just the cooked filling) in an airtight container with the cut side up for up to 3 months.
- Reheating in the oven: If you have time, I recommend reheating the ground beef stuffed peppers in the oven (or air fryer) at 350F. Place them in a casserole dish (the peppers may leak) and cover with aluminum foil (to steam the peppers). Bake covered for 20 minutes and uncovered for 5 minutes. If frozen, extend the cooking time. If reheating from frozen, extend the cooking time even further until warmed through, about 5-10 minutes longer.
- Reheating in the microwave: I recommend cutting the beef stuffed peppers into quarters, allowing them to separate (they sort of resemble flower petals!) before heating for 1-3 minutes in the microwave, until warmed through.

How to Make the Best Mediterranean Chicken Patties
- Sauté aromatics. In a large skillet, heat 2 tablespoons olive oil over medium-high heat for 2 minutes until sizzling hot. Sauté onions and garlic until tender and nicely browned, about 2-3 minutes. Add spinach and sauté for 1 minute until soft. Set aside on a plate to cool for 5 minutes.
- Make chicken mixture. In a large mixing bowl, add ground chicken, sautéed onion-spinach mixture, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Stir well with a spatula to combine everything together (or use your hands to press the ingredients together to evenly combine).
- Marinate. Shape the ground chicken mixture into a firm ball. This helps the mixture bind together to yield firm patties. Cover the bowl with plastic cling wrap and refrigerate for at least 30 minutes or overnight.
- Shape the patties. Take ½ cup chicken mixture at a time and shape into patties using your hands. You should get about 12 chicken patties.
- Cook the patties. Heat the remaining 1 tablespoon olive oil in a cast-iron skillet over medium-high heat for 2 minutes until sizzling hot. Place patties on the skillet (about 6 pieces per batch) and cook for 3-5 minutes until nicely seared and starting to brown up the sides. Flip the patties over and cook for another 3-5 minutes, until the internal temperature for the patties reaches 165 F as read on a meat thermometer.
Air Fryer Instructions
Place chicken patties (4 patties in each batch) in a single layer in the air fryer basket and lightly spray with oil to coat evenly. Cook at 375 F for 13-15 minutes until golden brown and the internal temperature for the chicken reaches 165F. Flip the patties halfway during cooking to brown evenly.

How to Serve
Serve these Mediterranean chicken patties on their own with a side of Tzatziki Sauce, or serve them with a side of Rice Pilaf and veggies. Some of my favourite vegetable sides to serve with them are:

- How to store leftovers: Mediterranean chicken patties will keep for up to 3-4 days in an airtight container in the refrigerator. Allow them to cool to room temperature before storing.
- How to freeze: You can prep these chicken patties ahead of time by following the recipe up until the cooking instructions. Instead of placing them on the pan, wrap each patty individually in plastic wrap (this prevents freezer burn) before placing them in a freezer-safe bag or container. The raw patties will be good for up to two months.
- How to thaw: The day before you want to cook your Mediterranean chicken patties, remove them from the freezer and let them thaw in the fridge overnight. Then, cook according to recipe instructions.

Serve this fun kid-friendly recipe for a family dinner, a fun lunch, or as an appetizer on game day. The best part? It is ready to serve in about 30 minutes (including prep!). The perfect last-minute recipe.

To make these delicious and easy homemade fish sticks, you will need the following ingredients (full recipe list in recipe card at bottom of post):
- white fish fillets - I would recommend using a firm fish such as Atlantic cod, Pacific rockfish, catfish, or even salmon. The last thing you want is a fish stick that falls apart when you pick it up. It will still work with softer fish, but be prepared for it to be much more delicate to handle.

- Italian seasoning
- paprika
- breadcrumbs - I used regular breadcrumbs. Feel free to use Panko instead for a crunchier crust.
- Parmesan cheese
- all-purpose flour
- eggs
- cooking oil spray
You can serve these as is or with tarter sauce. You can use store-bought sauce or make homemade tarter sauce in just a couple of minutes. To make your own, you will need mayo, lemon juice, dill pickles, and pepper.

How to Make the Best Homemade Fish Sticks
- Prep the fish. Use a paper towel and pat dry each fillet completely dry. Evenly season both sides with salt, pepper, 1 teaspoon Italian seasoning and paprika. Cut the fish fillet into approximately ¾-inch wide and 1-inch long pieces.
- Coat the fish. In a mixing bowl, whisk together breadcrumbs, the remaining 1 teaspoon Italian seasoning and Parmesan cheese until combined. Prepare two shallow plates with flour and beaten eggs. Dip each fish stick into flour to coat it completely and evenly. Then, dip it into the egg, and then breadcrumb mixture, coating completely and evenly. The flour sticks to the fish, the egg sticks to the flour, and the breadcrumbs stick to the egg. Gently press the breadcrumbs into the fish sticks to adhere them on as much as possible and shake off any excess.
- Bake. Transfer the breaded fish sticks onto a parchment-lined half sheet baking pan and coat each of the fish sticks evenly with cooking oil spray. This will create a golden brown crust during baking. Bake in a 400F preheated for 15 minutes until fully cooked through and golden brown.
- Serve. Serve immediately on its own or with tarter sauce for dipping. To make tartar sauce, combine mayo, lemon juice, pickles, and pepper in a small mixing bowl and stir well to combine.

How to Serve
Serve homemade fish sticks with a homemade tarter sauce on the side and a serving of Air Fryer French Fries, Baked Sweet Potato Wedges, or Crispy Leaf Potatoes.
They also go well with a side salad such as a Classic Coleslaw, Creamy Cucumber Salad, or Potato Salad, or some roasted veggies like Honey Roasted Carrots, Air Fryer Broccoli, or Roasted Spring Vegetables.

How to Store Chicken Breast
Store any leftover chicken breast in an airtight container and place in the refrigerator for up to 3 days. Most of these recipes are also freezer-friendly and can also be stored in the freezer for up to 3 months. Refer to the individual recipe post for complete storing instructions.
To reheat, you can reheat in a preheated 300F oven for 10-15 minutes until warmed through, or in the air fryer at 350F for 5-10 minutes. Depending on the type of recipe, you can also reheat on the stove over medium heat until fully warmed through or in the microwave in 30 second increments until warmed through.
If reheating from frozen, let it thaw first in the refrigerator overnight (or 6-8 hours) and then reheat.

Are you looking for a creative way to cook chicken? Then, it's time to try this harissa spatchcock chicken (butterflied chicken). It's juicy and tender, has the crispiest skin, and is packed with flavor from red pepper harissa paste and seasonings. Plus, by butterflying this chicken, you can grill or roast it in under 45 minutes, while still getting the added flavor from being cooked on the bone. You need this on your dinner menu tonight.

Why You'll Love Harissa Spatchcock Chicken
- A creative way to cut and cook chicken. When you spatchcock a whole chicken, you're essentially butterflying it so that it will cook faster and more evenly, reducing cooking time-and the guessing game that can come with it. You can cut down on cook time but still reserve the amazing flavor that comes from chicken cooked on the bone!
- It's seasoned with harissa paste. This harissa spatchcock chicken is also unique because of its seasonings! Harissa is a spicy chili pepper paste that originates in Tunisia in North Africa and very popular in Morocco. Ingredients
To make this delicious harissa spatchcock chicken, you will need the following ingredients:
- whole chicken
- harissa paste - harissa is a Moroccan red pepper paste that is going to completely elevate this chicken. You can use homemade or store-bought harissa paste. I used this one by Mina Harissa.
- olive oil
- paprika
- ground cumin
- garlic powder
- salt and pepper
You will also need a grill if grilling, or a grill pan or cast-iron skillet if roasting in the oven.

How to Spatchcock a Chicken
- Use a paper towel to pat dry the whole chicken completely before adding seasoning. This helps create extra crispy skin when roasting.
- Place chicken breast-side down on a clean and dry chopping board (wearing disposable gloves helps with easy handling). Cut along the backbone in the middle with kitchen scissors and remove the backbone, which is about 1-inch wide.
- Make a small cut with a knife along the white cartilage that connects the breastbone and remove the breastbone by pulling it out through the cut.
- Turn the chicken over with the breast-side up and flatten it out. Tuck the wings under the chicken breasts.
- Pat dry the spatchcock chicken again to remove any excess liquid.

How to Make the Best Harissa Spatchcock Chicken (Butterflied Chicken)
- Make the seasoning rub. In a small bowl, mix well to combine olive oil, harissa paste, paprika, cumin, garlic powder, salt, and pepper, until smooth. Reserve 2-3 tablespoons of the mixture and set aside.
- Season the chicken. Generously smear rest of the harissa seasoning mixture over the whole chicken inside and out and let it rest on a clean plate for at least 15 minutes. Make sure the seasoning covers the entire whole chicken including the inside cavity.

Two Ways to Cook
You can cook this chicken on the grill or in the oven.
To grill the chicken:
- Preheat the grill over medium-high heat for 3-5 minutes. Place the chicken on the grill and grill for 15-20 minutes on each side until nicely charred and cooked through (and until the internal temperature reaches 165F as read on a meat thermometer).
- Baste the chicken on both sides evenly with the remaining harissa paste during grilling.

To roast in the oven:
- Preheat the oven to 400 F. Heat an ovenproof grill pan or cast-iron pan on the stove for 5 minutes over medium-high heat (or preheat the pan in the oven for 5 minutes). Once sizzling hot, sear the chicken breast side down in the hot skillet for 3-5 minutes, until the skin gets a little crispy.
- Transfer the skillet to the oven and bake the chicken for 25-30 minutes until the skin on the breasts turns golden brown. You can add an oven-safe weight over the chicken such as a Dutch oven lid to promote browning.
- Remove the skillet from the oven and turn the chicken over with the breast side up. Brush the remaining harissa mixture over the chicken breasts.
- Transfer the skillet back into the oven and continue to bake the chicken for another 10 minutes until the internal temperature reaches 165F as read on a meat thermometer.
- Remove the chicken from the oven and place it on a large plate. Let the chicken rest for 15 minutes.
Serve with lemon wedges and extra harissa sauce, if desired.

How to Store
- How to store: Store the leftover butterflied chicken in the refrigerator for 3-4 days. While you can leave it on the bone, you can also shred it or cut it ahead of time for easy meal prep. If you make sandwiches or add leftover harissa spatchcock chicken to salads, you don't need to reheat it.
- How to reheat: It's easy to overcook chicken when reheating and end up with a dry cut of meat. To avoid this, heat the chicken in a preheated 325F oven until warmed through. Wrap it in aluminum foil and add drippings or broth to keep it moist.
- Tips for cooking a larger chicken: If you have an exceptionally large chicken, you may need to add cooking time. When grilling, I recommend covering the pan with a lid to help raise the overall temperature of the chicken. This helps it cook all the way through, even in the thickest parts.

- cooked chicken breast - this recipe requires cooked shredded chicken, and is a great recipe to use up any leftover roast chicken that you have. You can also easily use rotisserie chicken if you don't want to roast it yourself. Either way you will not be able to put this down!
- BBQ sauce - you can use homemade BBQ or your favorite bottled BBQ sauce to get the perfect flavour for your tastebuds.
- pizza dough - use homemade pizza dough or store-bought, whichever is easier.
- cornmeal - helps create a delicious texture on the bottom of the crust, and prevents the pizza from sticking to the pan.
- olive oil
- mozzarella cheese - I love using fresh mozzarella on pizzas, but if you have a bag of shredded cheese on hand that's fine too.
- red onion
- cheddar cheese
- fresh herbs - I topped this pizza with scallions, cilantro, and micro greens. If you can find arugula micro greens, those work amazingly well here. Basil, oregano, or fresh spinach would also be great.

How to Make the Best BBQ Chicken Pizza
- Prep. Preheat oven to 450 F. When hot, place rimmed quarter sheet baking pan in the oven for at least 20 minutes. In a small bowl, toss chicken breast in ¼ cup BBQ sauce. Set aside.
- Roll the dough. Roll out pizza dough on a lightly floured surface to desired thickness (note that the cook time is based on dough about ¼-inch thick). Prick the dough all over with a fork.
- Pre-bake the dough. Remove baking sheet from oven and sprinkle cornmeal evenly on top. Transfer pizza dough to baking sheet, brush with olive oil, then bake for 7 minutes.
- Add toppings. Spread remaining BBQ sauce on pizza dough, leaving about ½-inch border along the edge. Layer mozzarella, chicken, red onion, and cheddar cheese on top.

Ingredients and Substitutions
To make this delicious and comforting phyllo ground beef meat pie, you will need the following ingredients:
- ground beef filling - made with ground beef, vegetable oil, tomato paste, garlic, cumin, salt, and pepper.
- butter
- olive oil
- phyllo pastry sheets
- milk
- egg
- salt and pepper
You will also need measuring cups and spoons, mixing bowl, and a 9x13 casserole pan or half sheet baking pan.

How to Make the Best Phyllo Meat Pie (Egyptian Goulash)
- Prepare the beef filling. Heat oil in a large shallow saucepan for 2 minutes over medium-high heat until the hot oil sizzles. Add ground beef and stir well to cook for 5-7 minutes until browned on all sides. Stir in garlic and sauté for 1-2 minutes until tender. Season with salt, pepper, and cumin. Add tomato paste and stir well to combine. Set aside and let the beef mixture cool to room temperature, about 10 minutes.
- Assemble the phyllo meat pie. In a small mixing bowl, whisk together melted butter and olive oil and light grease a 9x13-inch casserole pan (or baking pan) using a silicone brush.
- Place 3-4 sheets of phyllo dough at a time on the lightly greased pan and tuck in any excess dough. Generously apply the butter mixture over the first layer of dough until evenly covered.
- Place another 3-4 sheets of phyllo dough and spread the butter mixture over evenly.
- Repeat with one more time layer of 3-4 sheets phyllo dough and butter mixture. This will create the laminated puff pastry dough made up of many layers of alternating dough and butter mixture.
- Add and evenly spread the meat filling.
- Repeat the same steps over the top of the filling by adding layers of 3-4 sheets of dough and butter mixture until all phyllo sheets and butter mixture are finished.

- Make and pour in the milk mixture. In a small mixing bowl, whisk together milk, egg, salt and pepper. Cut the phyllo pie into 12 even pieces using a sharp knife and slowly pour and spread the milk mixture over the pie.

- Bake. Transfer the baking pan into a 375 F preheated oven and bake for 35-40 minutes until the crust is crispy and golden brown on top. Let the pie rest for 10-15 minutes and serve.

Storing and Reheating
- Make ahead instructions: You can cook the beef filling 1-2 days in advance and store in an airtight container in the refrigerator. When ready to make the goulash, all you need to do is assemble the meat pie and bake.
- Tips for working with phyllo: Phyllo is typically found in the frozen aisle of the grocery store. To use it in this recipe, it needs to be thawed. For the best results, thaw it slowly in the refrigerator overnight, or for a few hours at room temperature. When you are working with the filo sheets, keep in mind that they will dry out if left out of their packaging for too long, so work quickly when assembling.
- How to store phyllo meat pie: Egyptian goulash is best served fresh. To store any leftovers, store in an airtight container in the refrigerator in the refrigerator for up to 3-4 days. Note that the phyllo may loose some of its crispiness. I found that the best way to get the crispiness back is to reheat in the air fryer.
- How to freeze: Once cooled, wrap up any leftover phyllo meat pie tightly in plastic cling wrap and store in the freezer for up to 3 months. Thaw overnight in the refrigerator or for a few hours at room temperature before reheating.
- How to reheat: I would not recommend reheating phyllo meat pie in the microwave as it will loose its crunch. Instead, use an air fryer, oven, or toaster oven preheated to 350F and reheat for 5-10 minutes until the meat pie is warmed through.

- You only need four simple ingredients. All you need to make this recipe is frozen strawberries, a sweetener, plain yogurt, and lemon juice. Unlike froyo that you buy at an ice cream parlor which likely contains a large amount of sugar, preservatives, and other ingredients that you won't even recognize.

- lemon juice
You can use this recipe as a base for any flavor of frozen yogurt that you are craving. Don't be afraid to get creative. Consider adding or substituting other frozen fruits, like blueberries, cherries, blackberries, raspberries, peaches, and mangos.

How to Make the Best Homemade Strawberry Frozen Yogurt
This five minute blender recipe is super easy to make in just minutes. First, add all the ingredients into a food processor or blender, and blend until smooth to a desired consistency, about 4-5 minutes in the food processor, and 30 seconds in the blender (be careful not to overblend as it will get too soft).

Then, just serve. You can also transfer the frozen yogurt into an airtight container or loaf pan and freeze for 15-20 minutes if you prefer it firmer.
You can also store the frozen yogurt in an ice cube tray, and then transfer to a freezer bag for easy portions.

How to Store
Store frozen yogurt in an airtight container for up to 1 month in the freezer. If you find that it is too hard to scoop, then let it sit at room temperature for about 5-10 minutes before scooping with an ice cream scoop. to the freezer.

Fresh strawberry pie is a delicious, summer dessert that is loaded to the brim with juicy, ripe strawberries tossed in a homemade strawberry glaze, all packed into a flakey and buttery pie crust. This mouthwateringly delicious is super easy to throw together, and goes so well served with a dollop of whipped cream on top. This pie is so good, you have to try it.

Why You'll Love Fresh Strawberry Pie
- Fresh summer produce = the best pies. Summer is the best season because it means the farms are packed with fresh summer produce like strawberries, blueberries, peaches, and cherries. And the best way to put those delicious fruit to use is in a summer fruit pie. Some other delicious summertime pies to try this year are Lattice Top Blueberry Pie, Cherry Pie, and Peach Cobbler.
- Quick and easy. This recipe is really easy to make. It involves pre-baking the pie crust, then making a delicious fresh strawberry filling and pouring it in. Chill in the refrigerator until set, and then serve. Don't forget the whipping cream for a cool touch.
- Made without jello or gelatin. Many fresh strawberry pies are made with jello or gelatin to help bind the filling together. We bind the filling here together with a strawberry glaze made from scratch using the strawberries themselves and a little cornstarch to thicken it all up.

Ingredients
- pie dough - you can use a store-bought pie dough or a homemade dough. I used my Easy Puff Pastry Pie Dough. You only need a single pie crust, so I halved the recipe. Whichever dough you use, you will need to blind bake it (or pre-bake) until golden, before adding the filling. You can also opt for a no-bake graham cracker crust as well.
- strawberries - use fresh in season, high-quality strawberries for the best and juiciest results. We went to the local market and picked our own huge bucket of strawberries (stay tuned for all the strawberry recipes in the coming weeks). I do not recommend using frozen strawberries for this recipe.
- granulated sugar
- vanilla extract
- lemon juice + zest - adds a little zing and balances out the flavors really nicely.
- cornstarch - helps thicken the filling so that we don't need to use any jello or gelatin in this recipe.

How to Make the Best Fresh Strawberry Pie
- Prepare the pie dough. If using homemade pie dough, roll out the pie dough and place it into a 9-inch pie dish. Gently press down and trim any excess dough from the sides. Use a fork or your fingers to crimp the edges. If using a store-bought pie crust, it should already be pressed into a disposable pie dish.
- Blind bake the crust. Blind bake the pie crust in a 400F preheated oven for 20 minutes until the edges turn golden brown. If you are using store-bought pie dough, blind bake according to the package instructions. (To help the crust stay in place while baking, you can fill with pie weights for the first 10 minutes, and then remove). Once baked, transfer onto a wire rack and cool completely.
- Make the strawberry glaze. While the crust is baking, prepare the strawberry glaze by adding 2 cups strawberries to a medium saucepan. Use a fork to mash the strawberries. Then add sugar, vanilla, lemon juice, lemon zest, and cornstarch. Stir well until well combined and bring to a simmer over medium heat until thickened to a desired consistency, about 5 minutes. (Do not use high heat to cook the glaze and stir constantly to make sure the mixture is cooked evenly). Set side and let cool for 15 minutes.

- Assemble the pie. In a medium mixing bowl, combine the remaining 3 cups strawberry with cooled strawberry glaze and toss well to coat evenly. Carefully transfer the strawberry mixture into the pie crust and refrigerate for 2-3 hours (or longer) until the filling is set completely.

- Serve. Slice and serve with a dollop of whipped cream on top.
How to Store
Fresh strawberry pie is best served fresh the day that you make it, to prevent the crust from being soggy when served. If you have leftovers, you can store this fresh strawberry pie lightly covered in plastic cling wrap for up to 2-3 days in the refrigerator (but expect the pie to get runny and the crust to get a little soggy).

- Make egg mixture. In a small container or mixing bowl combine eggs, heavy cream, vanilla extract, sugar, cinnamon and salt. Whisk to combine.
- Coat baguette slices. Lay slices of baguette in egg mixture and let sit for 2-3 minutes to soak it up, then flip and let sit another 2-3 minutes. Repeat until all bread is coated.
- Toast. Heat a large griddle or skillet over medium-high heat. Melt butter, then add sliced bread and let cook undisturbed for 3 minutes per side. Once they're on the griddle, don't touch! It's so much better for you and the fresh and vibrant flavor is just unmatched. Homemade beats store-bought any day!

Plus, marinate these chicken kebabs in advance and spend just 20 minutes grilling them (or make the in the oven or air fryer!). The best summer weeknight dinner.

- Authentic Korean flavor. One of the things that make Korean cuisine so delectable is patience. Slow-roasted meats. Pickled vegetables. And yup, you guessed it, marinades. For this recipe, you need gochujang, a Korean red pepper paste that you can pick up at most grocery stores in the international foods aisle.
- It's incredibly easy. Don't let the total time fool you. This recipe is painfully easy. All you need to do is whip up the marinade, dice your chicken, and let it sit until it's time to skewer and grill your chicken.
- Sweet, salty, savory, and spicy heaven. These Korean chicken skewers are marinated in a blend of red pepper paste, soy sauce, sesame oil, honey, ginger, garlic, and vinegar-which brings all the best flavors out with mouthwatering umami.

Ingredients and Substitutions
To make these flavorful and delicious Korean chicken skewers, you will need the following ingredients:
- chicken breasts - boneless and skinless, cut into 1-5-inch thick cubes.
- Korean red chili paste (gochujang) - for the most authentic flavor, use gochujang. You can substitute with Sriracha sauce if you can't get your hands on any.
- vegetable oil
- soy sauce
- vinegar - I would recommend using white vinegar or wine vinegar.
- sesame oil
- garlic
- ginger
- honey
- green onions
- white sesame seeds
You will also need measuring cups and spoons and skewers (I used bamboo skewers). I also used meat thermometer for checking doneness.

How to Make the Best Korean Chicken Skewers
- Marinate the chicken. Combine all the marinade ingredients including oil, soy sauce, vinegar, sesame oil, garlic, ginger, honey, and chili paste (or Sriracha sauce) in a small mixing bowl and stir well until smooth. Add cubed chicken and stir with a spoon to coat all the chicken pieces. Cover the bowl with cling wrap and refrigerate or at least 1 hour (or overnight for the best results). You can also store the marinated chicken in a sealed ziploc bag.
- Skewer the chicken. Add 4-5 pieces of cubed chicken to each skewer. Reserve the marinade.

- Cook. You can grill the chicken skewers, bake them, or cook in the air fryer.
- To grill the skewers: Lightly apply cooking oil over chicken skewers using a cooking oil spray or silicone brush. Preheat the grill over medium-high heat for 3 minutes until sizzling hot. Place the skewers evenly apart on the grill pan and grill for 8-10 minutes on each side, or until the internal temperature of the chicken reaches 165 F. Do not overlap the skewers at any time to ensure even cooking for all the skewers.
- To bake the skewers: Preheat the oven to 425 F. Place the marinated chicken skewers on a parchment-lined baking sheet or on a lightly oiled roasting rack in a baking pan. Bake for 15 minutes until golden brown and the internal temperature for the chicken reaches 165F. Turn on the broil function on the oven on high and broil for 2-3 minutes until nicely charred on the edges.
- To cook in the air fryer: Do not thread them and place about 10 cubed chicken pieces in the air fryer basket at a time. Cook at 350 F for 25 minutes, shaking the basket halfway through. You won't get the charred grill marks but they taste amazing and so tender.
- Make sauce. Transfer the remaining marinade from the bowl to a small saucepan and heat over medium heat for 2 minutes until it starts to boil.
- Serve. Transfer the skewers onto a plate and drizzle with the prepared sauce. Garnish with green onions and sesame seeds and serve hot.

Recipe Tips and Tricks
- How to store: Store leftover chicken skewers in an airtight container for up to 3-4 days.
- Marinate longer if you have time: For the best results, marinate your chicken overnight (or 6-8 hours). You can easily make the marinade in the morning and cook the skewers in the evening, but you can also prep it the night before. The longer you marinate, the more time the chicken has to soak up all the flavors. Time also allows the vinegar to break down the meat for a tender, juicy skewer. But if you are short on time, you can absolutely still enjoy delicious skewers with just an hour of marination time.
- Know your spices: Depending on where you buy it from and what kind you get, gochujang can range from mild to very, very spicy. Taste your red pepper paste before adding it to the recipe so that you can adjust it according to your desired spice level.

- long grain rice - I would recommend using a long grain rice such as jasmine rice or basmati rice. You can use a shorter grain but be prepared for the rice to be more mushy (still delicious though!).
- chicken broth or water
- peas
- green onions
- soy sauce
- sesame oil
This instant pot chicken fried rice recipe is so versatile that you can feel free to get creative and feel confident that it will turn out great. Just keep in mind that if you add more moisture (with wet veggies like onions or tomatoes), you should compensate by using less broth. Some great options to add in are: bell peppers, onions, corn, broccoli, green beans, cauliflower, and edamame.

How to Make the Best Instant Pot Chicken Fried Rice
- Cook eggs. Turn on the sauté function on the Instant Pot. Heat oil over high heat for 2 minutes until the hot oil sizzles. Add beaten eggs, and stir until scrambled and cooked through, about 1 minute.
- Add in chicken. Next, add carrots, garlic and chicken and sauté until evenly mixed and tender, about 2 minutes. Chicken does not need to be fully cooked through at this point. Season with salt and pepper.
- Add rice. Add rice and broth (or water) and stir well until evenly mixed. There should be about ½-inch of liquid above the mixture. Adding too much liquid will make fried rice more mushy.

- Pressure cook. Switch to pressure cooking mode on manual high and seal the lid. Let the fried rice pressure cook for 3 minutes. Once the time is up, let the fried rice sit in the pot for another 8-10 minutes. This allows the pressure to release slowly, making rice and chicken tender. Quick release the remaining pressure.
- Stir in remaining ingredients. Remove the lid and turn back on the sauté mode. Stir in peas, green onions, soy sauce and sesame oil and cook on high heat until the frozen peas are tender, about 1-2 minutes. Serve immediately.

Serving and Storing
- How to serve: Serve instant pot chicken fried rice as it on its own or with a Chinese Garlic Cucumber Salad or Asian Chopped Salad and Green Onion Dinner Rolls.
- How to store: Store in an airtight container for up to 3-4 days. Reheat over the stove on medium-low heat for a few minutes until warmed through.

- ground cinnamon
- salt
- milk
- vegetable oil - I would recommend a vegetable oil like avocado oil or melted coconut oil.
- egg
- vanilla extract - you can also substitute this with almond extract.
- fresh strawberries - I recommend using fresh strawberries for the best results. You can use frozen strawberries but the loaf will be more moist.
You will also need measuring cups and spoons (or kitchen scale), mixing bowls, and a 1 lb. loaf pan (5x9-inches).

How to Make the Best Strawberry Bread
- Combine dry ingredients. In a large mixing bowl, combine all the dry ingredients including flour, baking soda, baking powder, sugar, ground cinnamon and salt. Whisk together until evenly distributed and set aside.
- Combine wet ingredients. In a medium mixing bowl, whisk to combine all the wet ingredients including milk, oil, egg and vanilla extract.
- Add wet ingredients to dry ingredients. Pour the wet mixture into dry flour mixture and fold together using a rubber spatula until just combined and no dry ingredients is visible. Do not overmix. Overmixing will make the bread denser and firmer. Fold in the chopped strawberries until evenly mixed. Do not overmix.

- Bake. Lightly grease a 9x5-inch loaf pan (1 lb. loaf pan) with cooking oil, and pour in the batter. Bake in a 350 F preheated oven for 55 minutes until golden brown and a toothpick inserted into the center of the cake comes out clean.
- Serve. Let cool in the pan on a wire cooling rack for 10-15 minutes. Then invert to remove the loaf. Serve warm or at room temperature. Drizzle with a vanilla bean glaze or honey if desired.

- How to store: Freshly baked strawberry bread keeps the best at room temperature for up to two days in an airtight container. You can store them for up to 1 week in the refrigerator in an airtight container or wrapped tightly in plastic cling wrap, but you may lose some of the moist texture.

- How to make muffins: You can use this batter to make 12 muffins instead. Divide the prepared batter into a 12-tin muffin pan lined with cupcake liners or sprayed with cooking oil. Bake for 20-25 minutes until a toothpick inserted into the center comes out clean.

It's all tossed in a super simple vinaigrette that brings out all the flavors of the fresh ingredients. The best part? You can throw this all together in just 25 minutes, including prep! This is the side dish that your summer cookouts have been missing.

- corn - this salad is best with grilled corn on the cob, but you can easily substitute it with frozen corn and enjoy this any time of year. Thaw the corn in boiling water for a few minutes. To get it toasty, heat oil in a skillet over medium heat. Once sizzling hot, sauté the kernels for a few minutes until browned.
- butter
- cherry tomatoes - free free to substitute with grape tomatoes or roma tomatoes (cut into 1-inch pieces).
- ricotta salata cheese - ricotta salata is a salty cheese closer in line with feta than fresh ricotta. I like adding it to this salad because it won't melt or get mushy if you're serving this outside during a cookout. You can also substitute this with feta cheese.
- scallions - to add extra bite, throw in lots of sliced scallions.
- extra virgin olive oil
- fresh basil leaves - if you don't have basil, try subbing in fresh mint for an equally refreshing and fun flavour.
- salt and pepper
This corn salad is also completely customizable. You can add in whatever vegetables that you have on hand. Some of my favorites to add are cucumber, grilled zucchini, bell peppers, and red onion.

How to Make the Best Summer Corn Salad
- Grill the corn on the cob. Preheat a grill over medium-high heat. Place each ear of corn on a large piece of aluminum foil. Put ½ tablespoon of butter on top of each, then roll and seal in the foil. When grill is hot, add wrapped ears of corn and grill about 5 minutes per side, for a total of 15 minutes. Set aside and cool for 10 minutes.
- Slice the corn kernels off. When corn is cool enough to touch, slice kernels off and place in a large bowl.
- Toss in remaining ingredients. Add scallions, tomatoes, ricotta salata, and olive oil, then toss to combine. Then, add salt and pepper, taste, and adjust seasoning as needed. Add freshly torn basil leaves right into the bowl, give one final toss, and then serve warm or at room temperature.

Mediterranean Turkey Burgers
Mediterranean turkey burgers are tender, juicy, and delicious. They are loaded with classic Mediterranean flavours like garlic, fresh dill, and lemon juice which will have everyone coming back for seconds. Every. Single. Time. With just 10 minutes of prep, these lean turkey burgers make for the perfect summer weeknight meal that's healthy and delicious. Plus, they are easy to make ahead and freezer-friendly!

I have partnered with the Turkey Farmers of Canada to bring you this delicious Mediterranean turkey burgers recipe. All images and opinions expressed are my own.
Why You'll Love Mediterranean Turkey Burgers
- Healthy and delicious. Turkey is a great lean protein that you will feel good about feeding to your family. Plus, these burgers are slathered with tzatziki sauce (rather than mayo or cheese), making them not only delicious but healthy. They are a total family favourite.
- Packed with flavour. One of the best things about cooking with ground turkey is that it is a versatile protein that can be seasoned in endless ways. It takes on the Mediterranean flavours seasoned here so well.
- Perfect for meal planning. Turkey burgers are perfect for meal planning because they are easy to make ahead and can be frozen for up to 3 months! It's the perfect recipe to make ahead when planning healthier meals this summer.

Ingredients
To make these delicious Mediterranean turkey burgers, you will need a cast-iron skillet or grill pan and the following ingredients:
- ground turkey
- olive oil
- onion
- garlic - fresh garlic adds incredible depth of flavour to these turkey burgers. You could also easily substitute with garlic powder for a similar flavour.
- breadcrumbs
- fresh dill - you can also substitute with dried dill or substitute with another fresh herb like fresh parsley.
- lemon juice
- ground cumin
- salt and pepper
To assemble the burgers, you will need hamburger buns, lettuce, tomato, and tzatziki sauce. You can use store-bought tzatziki sauce or homemade, whichever is easier!

How to Make the Best Mediterranean Turkey Burgers
First, prepare the turkey patties.
In a large skillet, heat 2 tablespoons oil over medium-high heat for 2 minutes until sizzling hot. Add onions and garlic and sauté until tender and nicely browned, about 2-3 minutes. Set aside on a plate for 5 minutes to cool down slightly.
In a large mixing bowl, add ground turkey, sautéed onion and garlic, breadcrumbs, dill, lemon juice, cumin, salt, and pepper. Stir well with a spatula to combine everything together (or use your hands to press the ingredients together to evenly combine).
Shape the ground turkey mixture into a firm ball. This helps the mixture bind together to yield firm patties. Cover the bowl with plastic cling wrap and refrigerate for at least 30 minutes, up to overnight.
Divide the turkey mixture into 4 equal parts and use your hands to roll them into balls. Then, shape them into patties by flattening them in the palm of your hand until they are about ½-inch thick.
Then, cook the turkey patties.
Heat the remaining 1 tablespoon olive oil in a cast-iron skillet (or grill pan) over medium-high heat until sizzling hot, about 2 minutes. Place patties on the skillet and cook for 3-5 minutes until nicely seared and starting to brown up the sides. Flip the patties over and cook for another 3-5 minutes, until the internal temperature for the patties reaches 165 F as read on a meat thermometer.

Finally, it's time to assemble the burgers.
On each hamburger bun, add a piece of lettuce and a turkey patty. Drizzle 1 to 2 tablespoons of tzatziki sauce on top, and top the patty with a slice of tomato. Place the top half of the bun on top to assemble the burger.
Serve with a side of crispy french fries or a side salad such as coleslaw or macaroni salad.

Recipe Tips and Tricks
- Make ahead instructions: You can marinate and store the turkey mixture in an airtight container (or tightly covered in cling wrap), or shape the patties, stack them up between layers of parchment paper and store in an airtight container. Either way, it will keep for up to 1-2 days in the refrigerator.
- How to freeze: You can easily freeze uncooked Mediterranean turkey burger patties for up to 3 months. Place them on a parchment lined baking tray and into the freezer for an hour. Then, stack them up and layer small squares of parchment paper in between. Tightly wrap the stack in plastic cling wrap and store in an airtight container or freezer bag and store in the freezer for up to 3 months. To cook, first defrost overnight in the refrigerator, then follow recipe instructions.
- How to tell if the turkey burger is cooked: An instant read meat thermometer is the tool that I recommend using for checking for doneness when cooking turkey. To get a quick measurement, just insert the thermometer halfway inside the patty for a reading.
- How to store: Store cooked turkey burger patties (once cooled to room temperature) in an airtight container and store in the refrigerator for up to 3-4 days. To reheat, heat on the stovetop over medium-low heat until warmed through, about 5-10 minutes.
- How to cook in the oven: You can also cook these turkey burgers in the oven at 425 F for 15 minutes, or broil on low for 4-5 minutes per side. Either way, the turkey will be done once the internal temperature reaches 165 F.

Crispy, shredded slow cooker carnitas (pulled pork) are a Mexican favorite that you can easily bring to your home. Packed with flavor from the natural juices of the slow-cooked pork and delicious seasonings such as oregano, paprika, and garlic powder, these slow cooker pork carnitas might just become your next family favorite. Enjoy over rice, potatoes, beans, or veggies, or pair with tortillas for delicious pulled pork tacos. No matter how to choose to serve them, these slow cooker pork carnitas always hit the spot.

Why You'll Love Slow Cooker Pork Carnitas
- Crispy, salty, roasted pork. Pork is one of the most flavorful meats out there, and when you slow cook baby back ribs (or pork shoulder), the lean, tender, and flavorful meat transforms into one of the most amazing meals you'll ever have.
- Slow-cooked for hours. Although 6-10 hours may seem like a large time commitment for these pork carnitas, you can simply forget about them and let the slow cooker do its job. It's one of the easiest meals to throw together with basically no maintenance and minimal dishes.
- Cook it to your liking. The last step in this slow cooker pork carnitas recipe crisps up the carnitas but it is completely optional. You can opt for the easy way out and decide you're done cooking (and end up with something mouthwatering), or you can crisp up your pork even more in the oven to finish it off. Either way, the results are delicious, tender, and melt in your mouth.

Ingredients
To make these delicious Mexican pulled pork tacos, you will need the following ingredients:
- pork - to get the most tender and juicy carnitas, use boneless pork shoulder or baby back ribs.
- vegetable oil - you can use any vegetable oil such as avocado oil, grapeseed oil, or canola oil.
- salt and pepper
- seasoning - dried oregano, paprika, and garlic powder.
- onion
- water
- scallions - optional, for garnish.
You will also need measuring spoons, mixing bowl, and a slow cooker (crockpot).

How to Make the Best Slow Cooker Carnitas (Pulled Pork)
- Prepare the pork. Pat dry pork shoulder or ribs with paper towel completely and set aside. In a small bowl, stir well to combine oil with all the dry rub ingredients until smooth (salt, pepper, oregano, paprika, and garlic powder). Rub and spread onto pork until evenly coated.
- Slow cook. Spread chopped onions evenly inside a 6-quart slow cooker (or crockpot) and add water. Place pork on top of onions. If using ribs, you can stack them on top of each other. Cover and cook on 8-10 hours on the LOW setting or 4-6 hours on the HIGH setting until fork tender.
- Shred the pork. Shred the pork by using two forks to pull the meat apart into small bite size and discard the bones (if using ribs).
- Crisp the pork (optional). Add shredded pork along with some drippings from the slow cooker into a large frying pan. Spread evenly. Heat over medium-high heat for 6-8 minutes until the juices evaporate and pork turns nicely brown and crispy.
- Serve. Garnish with scallions and serve with Cilantro Lime Rice or Pulled Pork Tacos.

Serving and Storing
- How to serve: Serve pork carnitas with White Rice or Cilantro Lime Rice and Refried Beans, pinto or black beans, or roasted vegetables such as potatoes, broccoli, and carrots. You can also add them to tortillas to make Mexican Pulled Pork Tacos.
- How to store: Store leftover slow cooker pork carnitas in an airtight container in the refrigerator for up to 4 days. Keep in mind that raw pork is best cooked fresh and will only last for 2-3 days in the refrigerator.
- How to freeze: Freeze carnitas in an airtight container or freezer bag for up to 3 months. When ready to eat, allow it to thaw overnight in the refrigerator before reheating.
- How to reheat: You can reheat leftover pork carnitas in a pan on the stovetop over medium heat. Add some juices if you want to stop the meat from drying out or leave uncovered if you want to crisp up the pork.
