- croutons - I used seasoned garlic croutons, but you can use plain croutons or any flavor that you would like.
- cheddar cheese - or substitute this with your favourite kind of cheese that is easily grated. A popular option is Parmesan cheese.
- lemon dressing - made with olive oil, fresh lemon juice, Parmesan cheese, garlic powder, and salt and pepper. You can also adjust the flavors in the dressing by adding in your favorite dried herbs.

Ingredients
- 5 cups kale, shredded
- 1 cup cherry tomatoes, halved
- ½ cup croutons
- ¼ cup cheddar cheese, shredded
For the lemon dressing:
- 2 tablespoons olive oil
- 2 tablespoons lemon juice, freshly squeezed
- 1 tablespoon Parmesan cheese, freshly grated
- ½ teaspoon garlic powder
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon ground black pepper (or to taste)
Instructions
- Place kale into a large mixing bowl or serving plate. Add cherry tomatoes, croutons, cheddar cheese.
- In a small mixing bowl, stir to combine olive oil, lemon juice, Parmesan cheese, garlic powder, salt and pepper.
- Pour the dressing over the salad and toss to combine.
