Description

Lemon kale salad is a simple, flavorful, and healthy meal that’s thrown together in just minutes with fresh ingredients. The perfect quick lunch or dinner.


Ingredients

  • 5 cups kale, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup croutons
  • 1/4 cup cheddar cheese, shredded

For the lemon dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon Parmesan cheese, freshly grated
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon ground black pepper (or to taste)

Instructions

  1. Place kale into a large mixing bowl or serving plate. Add cherry tomatoes, croutons, cheddar cheese. 
  2. In a small mixing bowl, stir to combine olive oil, lemon juice, Parmesan cheese, garlic powder, salt and pepper.
  3. Pour the dressing over the salad and toss to combine. 

Notes

Make ahead instructions: Easily prep the ingredients ahead of time (chop up the vegetables and make the dressing). Store the salad and dressing in separate airtight containers in the refrigerator for up to one week. Be sure to wait to add the croutons and cheese until just before serving as they can become soggy when tossed with dressing.

How to store: Typically, you will want to store the salad ingredients and the dressing separately to avoid the greens from getting wilted. However, kale is one of the heartiest greens out there, so it can withstand the dressing quite well. So, if you are unable to store them separately, it can last up to 3 days in an airtight container in the refrigerator. If there are still croutons in there, you can choose to remove them as they will get soggy.
