    One of my favorite items in my kitchen is my cast iron skillet. It's a useful tool that allows you to sauté delicious meals on it over the stove, and then pop into the oven to continue to bake if needed — whether it's to melt cheese on top, create golden brown crust, or bake bread.     Description

    Over 25 best cast iron skillet recipes for breakfast, lunch, or dinner including pasta, pizza, chicken, ground beef, bread, eggs, and more. One of my favorite recipes is this Cheesy Tortellini and Sausage Bake.


    Ingredients

    • 1 package (9 ounce) cheese tortellini
    • 2 tablespoons olive oil
    • ½ pound Italian sausage
    • ½ cup onions, finely chopped
    • 3 cups tomato sauce (24 ounces)
    • ¼ cup fresh parsley, finely chopped 
    • ½ teaspoon salt (or to taste)
    • ½ teaspoon ground black pepper (or to taste)
    • 1 cup mozzarella cheese, shredded
    • 2 tablespoons Parmesan cheese, grated

    Instructions

    1. Preheat oven to 350 F.
    2. Bring a large pot of water to a boil over medium high heat. Add tortellini and cook according to package directions, about 8-10 minutes. Drain with a colander, and set aside.
    3. Meanwhile, heat oil in a large cast-iron skillet (or oven safe skillet) for 2 minutes over medium-high heat until the hot oil sizzles and shimmers. Add sausage and cook for 5-7 minutes until browned. Break the sausages into small pieces using a spatula.
    4. Add onions and sauté until tender, about 3-4 minutes. Stir well to combine.
    5. Add in tomato sauce, parsley, salt and pepper. Stir well to mix and bring to a simmer. Turn the heat down to low, and simmer uncovered for 5 minutes.
    6. Add in the cooked tortellini and stir well to fully coat it in sauce. Sprinkle shredded mozzarella and grated Parmesan evenly on top of the tortellini.
    7. Transfer the skillet into the oven and bake for 10-12 minutes, until the cheese melts and turns golden brown. Remove from oven, and let cool for 5 minutes before serving.
    8. Garnish with extra parsley and Parmesan cheese on top.
