Happy St. Patrick's Day!! What does that call for? A GREEN recipe! 🙂
Today I am going to share one of my favourite side dishes. I love making sides because let's be honest, dinner would be so boring without them. I try to have 2-3 sides to keep my main dish company: salad, rice (we eat it with almost every meal!) and some type of vegetables. Try is the key word... sometimes it is just a side of rice for us. My husband is happy with whatever I make for dinner but when I serve quick and easy sautéed asparagus, he is extra happy.
When I say quick and easy, I really mean quick and easy. That feature alone would be enough to make this one of my favourite vegan side dishes but surprising it is not. What I love about this dish is the amazing flavour and texture. With only 3 ingredients, it is miraculous how much flavour these little vegetables produce. Sometimes, the healthiest side dishes are the tastiest and this dish fits that category, it basically defines it.
Asparagus, olive oil, seasoning salt and pepper. That is all you need. I told you when I say quick and easy, I mean it! Heat up a little oil, sauté the asparagus for 5-12 minutes with a generous sprinkle of seasoning salt and pepper and you are done. I suggest 5-12 minutes because it depends on how crunchy or soft you like asparagus. I prefer mine on the tender side, so I cooked them for about 10 minutes before serving.
The best thing to pair these asparagus with is with a scoop of creamy garlic mashed cauliflower. The combination of flavours between the asparagus and the mashed cauliflower is something that is very hard to describe. It works amazingly, as if they were meant to be consumed together. Serve that with grilled salmon, chicken or lamb and you have yourself a five-star meal.
I seriously have to stop writing because the thought of that is making my mouth water...
Quick and Easy Sautéed Asparagus
- Total Time: 15 minutes
- Yield: 4 servings
Description
Keep dinner healthy, yet full of flavour with a side of quick and easy sautéed asparagus: the perfect companion to your main dish.
Ingredients
- ½ tablespoon olive oil
- 1 bunch asparagus, with the ends cut
- ½ teaspoon seasoning salt
- ½ teaspoon pepper
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the asparagus and generously sprinkle seasoning salt and pepper.
- Sauté for 5-12 minutes, tossing occasionally. If you prefer crisp and crunchy asparagus, cook for only 5 minutes. For softer and more tender asparagus, cook for about 10-12 minutes.
