Why You’ll Love Cheesy Roasted Asparagus

    • It’s so easy to make. This cheesy roasted asparagus doesn’t take much more effort than regular roasted asparagus. You’ll bake the asparagus in the oven as usual for 10 minutes. Take it out. Top with shredded cheese. Then, pop it back in the oven to broil for 5 minutes longer.
    • A few simple ingredients pack on the flavor. Despite being with just a handful of ingredients, these cheesy spring side dish is loaded with flavor. It’s garlicky, savory, cheesy, and delicious. And if you love asparagus and cheese, you have to try this.
    • The crispy, melty, cheesy top. The way the cheese creates melted strings as you pull the asparagus might just be the best part. The golden-brown crisp mozzarella topping helps too. Roasted vegetables have never been better!

    Ingredients and Substitutions

To make this easy cheesy roasted asparagus, you will need the following ingredients (full quantities in the recipe card below):

    • asparagus
    • salt and pepper
    • garlic
    • olive oil
    • cheese - we use mozzarella cheese and Parmesan cheese. Feel free to substitute with your favorite kind of cheese. I recommend cheese that melts easily such as cheddar cheese, Monterrey Jack, brie, or havarti.

You will also need measuring cups and spoons and a large half sheet baking pan.

How to Make the Best Cheesy Roasted Asparagus

    1. Season asparagus. Place asparagus on a large half sheet baking pan and season with salt and pepper. Sprinkle minced garlic on top and drizzle with olive oil. Use a spatula to toss well to coat evenly.
    2. Bake. Arrange the asparagus in a single layer on the baking sheet and bake in a 400F preheated oven for 15 minutes until tender.
    3. Add cheese. Remove the sheet pan from the oven and sprinkle mozzarella and Parmesan cheese evenly over the asparagus. Return the pan to the oven and continue baking for another 3-4 minutes until the melted cheese turns golden brown. Serve immediately.

    How to Serve

Serve cheesy roasted asparagus as a side dish along your favorite main dishes for a complete spring dinner. Some of my favorites are:

    • Dutch Oven Whole Roast Chicken
    • Garlic Butter Salmon
    • Ribeye Steak
    • Air Fryer Chicken Breast
    • Garlic Shrimp Skewers

    Recipe Tips and Tricks

    • Varying cook times: If your asparagus is large and thick, they’ll need 15 minutes to bake. If they’re thin, take them out at 10 minutes. Keep in mind that the extra 5 minutes of broiling will not just melt the cheese—it will cook the asparagus. So, be careful not to overcook the veggies.
    • How to store: After it cools to room temperature, store cheesy roasted asparagus in an airtight container in the fridge for 4-5 days.
    • How to reheat: Reheat cheesy roasted asparagus in a 425F oven for about 10 minutes until warm and cheese has melted again.
