BEEEEP BEEEEP BEEEEP. Yes, that is the dreadful sound of your alarm in the morning. You know, the one that has rang for the third time after you've already pushed snooze twice. The one that means that you actually have to get up. Mornings can be tough, especially mornings where you have to get up early for work. But it doesn't have to be. Give yourself a good reason to get up for so early. E.L.T. (egg lettuce tomato) breakfast bagel. That's all.
What is an E.L.T. breakfast bagel? Imagine a layer of delicious scrambled eggs, topped with fresh tomatoes and lettuce, sandwiched between two slices of a toasted 12-grain bagel. In other words, a vegetarian version of the B.L.T. bagel.
This sandwich is a huge win with me because it is so easy and so quick to make. It takes about 5-10 minutes. Plus, it's portable. That means if I am too rushed one morning, I can easily wrap it up in plastic wrap and take it with me "to go". I can eat it in the car or at work. In the fast-paced world that we live in, convenience is key.
So, you have no excuse to skip breakfast again! 🙂
Just look at those eggs. Mmmmmm. I am not supposed to eat too many eggs because of its high cholesterol content, but sometimes it is just too irresistible and I crave it. A delicious and healthy breakfast just puts me in a good mood. I could have a million things running through my mind about what I need to do that day, but when I have a breakfast like this, I know it's going to be a good day. It gets me full and provides me with enough fuel to get me going until lunch.
Jazz it up
There are so many different ways that you alter this bagel. Add any vegetables that your heart desires in between those two slices. Mushrooms? Green peppers? You got it. Go for it!
My two favourite ingredients to add (although not particularly on the healthy side) are bacon and cheese. Sometimes I add both, other times I add one or the other. The addition of bacon instantly transforms this to a... wait for it... B.E.L.T. breakfast bagel. Yum!

E.L.T. (Egg Lettuce Tomato) Breakfast Bagel
- Total Time: 8 minutes
- Yield: 1 bagel
Description
Start your morning right and curb your hunger with a healthy and classic E.L.T. (egg lettuce tomato) breakfast bagel.
Ingredients
- 1 bagel
- ½ tablespoon vegetable oil
- 2 eggs
- 2 slices of tomatoes
- 1 leaf of lettuce
- salt and pepper to taste
Instructions
- Cut the bagel into two slices and place in your toaster.
- Heat a non-stick frying pan with oil over medium heat. Add the eggs and scramble.
- Place the cooked, scrambled eggs onto the bottom slice of your toasted bagel. Shake some salt and pepper on top to taste.
- Add the slices of tomato and leaf of lettuce on top of the eggs. Finish by topping it up with the other half of the bagel.
- Slice down the middle and eat! Or wrap up to eat on-the-go.
