Ingredient Notes
To make this quick and easy Mediterranean Flatbread, you will need the following ingredients (full measurements in recipe card below):
- pizza dough - you can use homemade pizza dough or store-bought to make it easier.
- pesto sauce - make our homemade basil pesto in just 5 minutes or use a store-bought pesto to save time.
- mozzarella cheese - if you don’t have mozzarella on hand, try shredded provolone, cheddar, or Colby Jack cheese.
- grape tomatoes - you can also use cherry tomatoes or campari tomatoes.
- red onion - red onions have a mild flavor, but if you don’t have them, use whatever kind of onions you have on hand.
- kalamata olives - you can use black olives instead, or omit them completely if you’re not a fan of olives.
- olive oil
- arugula - baby spinach or baby kale can be used in place of the arugula. It will result in a different flavor but still delicious.
- feta cheese - you can also use goat cheese or dollops of ricotta instead of feta.
You will also need measuring cups and spoons, a large baking sheet, and parchment paper.
How to Make the Best Mediterranean Flatbread
- Roll out dough. Divide the pizza dough into 2 and transfer each to a floured surface. Gently roll each pizza dough into a 8x10-inch rectangle or oval. Transfer each rolled dough to a large baking sheet lined with parchment paper. Let the dough rest for 5 minutes and use your hands to stretch out the dough a bit more if needed.
- Add toppings. Add pesto sauce and spread evenly over the pizza crust. Place mozzarella, tomatoes, red onion, and olives evenly over the crust.
- Bake. Bake in a 450 F preheated oven for 10 minutes until the melted cheese turns golden brown.
- Add fresh toppings. Drizzle with olive oil and sprinkle with arugula and feta.
- Slice. Remove the sheet pan and transfer the flatbread onto a cutting board. Slice the flatbread into 4-6 pieces (triangles) with a knife or pizza cutter.
- Repeat. Repeat with the second pizza dough and serve warm.
Recipe Variations
- Adjust the toppings. The best part of this flatbread pizza recipe is that you can customize it to your heart’s desire — if you like something, add more! If you don’t like a topping, you can reduce, replace, or omit it. Experiment and make the flatbread exactly how you like it. Some great options are roasted red peppers, artichoke hearts, or grilled eggplant.
- Make it spicy. Add a kick of heat by sprinkling red pepper flakes or drizzling chili-infused oil over the flatbread.
- Add herbs. Sprinkle some chipped herbs over the flatbread for an exter burst of Mediterranean flavor. Try oregano, thyme, or basil.
- Customize the cheese. We crumbled some feta over our flatbread, but feel free to experiment with other varieties of Mediterranean cheeses such as halloumi or goat cheese.
- Make it gluten-free. If you're looking for a gluten-free or low-carb option, consider using gluten-free pizza dough or a cauliflower crust.
How to Serve
This Mediterranean Flatbread is delicious served on its own as a vegetarian dinner or appetizer, or paired with some delicious classic pizza sides including:
- Garden Salad
- Garlic Breadsticks with Marinara Sauce
- Cauliflower Mac and Cheese
- Charcuterie Board
- Tomato Basil Soup
- Creamy Cucumber Salad
- Antipasto Skewers
Recipe Tips and Tricks
- Use an oven thermometer. The key to a perfect flatbread pizza is a well-done bottom. Nobody likes a soggy crust! The high temperature is imperative to making sure the flatbread is done all the way through, so make sure your oven is hot enough by using an oven thermometer to calibrate the temperature.
- Shaping the flatbread. For a traditional flatbread, we shape the pizza dough out into an 8x10-inch oval or rectangle. You can also use this recipe to make a Mediterranean pizza and simply shape the dough into a circle.
Storing and Freezing Instructions
How to Store
Place leftover flatbread pizza in an airtight container and refrigerate for up to 3 days. To prevent the flatbread from becoming soggy, store it separately from the fresh toppings and assemble it after reheating in the oven at 450℉ for 10 minutes until the cheese has melted.
How to Freeze
Transfer the Mediterranean flatbread into freezer bag or wrap tightly in aluminum foil and freeze flat for up to 3 months. Reheat straight from frozen to prevent the flatbread from getting mushy.
