Description

This Mediterranean Flatbread is a zesty and cheesy vegetarian pizza that is loaded with classic Mediterranean ingredients. It is made with a crispy pizza dough base and topped with pesto, grape tomatoes, kalamata olives, red onion, arugula, and feta cheese. This flatbread is quick and easy to make and hard to forget!


Ingredients

  • 1/2 pound pizza dough, homemade or store bought
  • 1/2 cup pesto sauce, homemade or store bought
  • 1 cup mozzarella cheese, shredded
  • 1 cup grape tomatoes, halved
  • ½ cup red onion, thinly sliced
  • 1/2 cup kalamata olives, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup fresh arugula
  • ½ cup feta cheese, crumbled

Instructions

  1. Preheat oven to 450F.
  2. Divide the pizza dough into 2 and transfer each to a floured surface. Gently roll each pizza dough into a 8x10-inch rectangle or oval.
  3. Transfer each rolled dough to a large baking sheet lined with parchment paper. Let the dough rest for 5 minutes and use your hands to stretch out the dough a bit more if needed.
  4. Add pesto sauce and spread evenly over the pizza crust. Place mozzarella, tomatoes, red onion, and olives evenly over the crust.
  5. Bake for 10 minutes until the melted cheese turns golden brown
  6. Drizzle with olive oil and sprinkle with arugula and feta.
  7. Remove the sheet pan and transfer the flatbread onto a cutting board. Slice the flatbread into 4-6 pieces (triangles) with a knife or pizza cutter.
  8. Repeat with the second pizza dough and serve warm.

Notes

How to store: Place leftover flatbread pizza in an airtight container and refrigerate for up to 3 days. To prevent the flatbread from becoming soggy, store it separately from the fresh toppings and assemble it after reheating in the oven at 450℉ for 10 minutes until the cheese has melted.

How to freeze: Transfer the Mediterranean flatbread into freezer bag or wrap tightly in aluminum foil and freeze flat for up to 3 months. Reheat straight from frozen to prevent the flatbread from getting mushy.
