    Ingredients

    To make easy and delicious baked queso chicken, you will need the following ingredients (full measurements in recipe card below):

    • chicken breasts
    • chicken marinade - made with olive oil cumin, chili powder, paprika, garlic powder, dried oregano (or Italian seasoning), salt, and pepper.
    • olive oil
    • onion
    • tomato
    • jalapeño - optional for extra spiciness.
    • queso - you can use homemade Mexican queso or store-bought, whichever is easier! I love making homemade queso and using leftovers for this dish.
    • fresh cilantro - for garnish.

    How to Make the Best Baked Queso Chicken

    1. Marinate the chicken. In a large ziploc bag, combine chicken breasts with 1 tablespoon olive oil and all seasoning including cumin, chili powder, paprika, garlic powder, oregano, salt and pepper. Press air out of the bag and seal tightly. Press the seasoning around the chicken to coat. Let it marinate for at least 15 minutes, up to overnight in the fridge.
    2. Sear the chicken. When ready to cook, heat the remaining 1 tablespoon oil in a large cast-iron skillet for 2 minutes over medium-high heat until the hot oil sizzles. Sear the chicken breasts until nicely browned on both sides, about 4-5 minutes on each side. Once done, transfer onto a plate.
    3. Sauté aromatics. In the same skillet, add onion and tomato and sauté until soft, about 2-3 minutes.
    4. Assemble. Return the chicken to the skillet and top with sautéed onion and tomato. Spread queso sauce evenly over each chicken breast. (If you don't have a cast-iron skillet, use a 9x13-inch casserole pan).

    1. Bake. Bake on the top rack of a 400F preheated oven for 20-25 minutes until fully cooked through and queso turns golden brown. The internal temperature for the chicken should reach 165F as read on a meat thermometer.
    2. Serve. Garnish with fresh cilantro and serve with cilantro lime rice, crusty bread, or over pasta if desired.

    Description

    Ingredients

    • 4 chicken breasts (about 2 lb. total), skinless and boneless 
    • 2 tablespoons olive oil, divided
    • 1 teaspoon ground cumin
    • 1 teaspoon chili powder
    • 1 teaspoon paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon dried oregano or Italian seasoning
    • ½ teaspoon salt (or to taste)
    • ¼ teaspoon ground black pepper
    • 1 medium onion, finely chopped
    • 1 medium tomato, diced
    • jalapeño, diced (optional)
    • 2 cups queso sauce, homemade or store-bought
    • 1 tablespoon fresh cilantro (for garnish)

    Instructions

      I came across this recipe while looking for something different to make for dinner. It was yummy!!

      I used Greek yogurt for some of the whipping cream in the queso because I needed to use it up. That was the only thing I did differently. I'm glad I used your recipe instead of store bought. SO worth it.

      I will definitely be making this again. The queso for sure!

      I made this today for family dinner, along with your homemade queso sauce. Ok, so I left out the jalapenos as my husband doesn't do spice, but my 11yo son proclaimed it really good, and the OH wiped the sauce from the pan with his finger., he liked it so much. Thanks for the recipe!

      Oh my goodness, so good! I needed something for chicken yesterday and a quick Google search brought me to this recipe. I had to improvise with a can of tomatoes with green chiles since I just passed over jalapenos earlier that day in the store. I also used your queso recipe! So, so good! We had some over rice with extra queso sauce and even over tortilla chips, yum! This will be a regular here.
