Frittatas are one of my best breakfast options any time of the year. It's one of those breakfast items that can be served throughout the day whether it's for lunch or dinner! This asparagus feta frittata is one of my favorite ways to celebrate asparagus season! The tender cooked asparagus has just enough bite, and the briny flavor of the feta wakes up the whole dish. It's a simple, timeless celebration of seasonal veggies that you'll want to make again and again!
Why You'll Love This Asparagus Frittata
- So simple to make. After sauteing the vegetables in your cast iron pan, cover them with whisked eggs and cheese, then pop the entire pan in the oven to bake. It's the ultimate one pot breakfast!
- Naturally low in carbs. Since this is similar to a crustless quiche, it's far lower in carbohydrates than regular quiches and loaded with protein from the eggs. It's a great option for people trying to stick to a low-carb diet!

Ingredient Notes
To make this delicious Asparagus Frittata, you will need the following ingredients (full measurements in recipe card below):
- butter - to gently saute the veggies. You can also use ghee, tallow, or olive oil.
- onion - adds extra flavor.
- asparagus - snap off the ends and cut the asparagus into 1-inch pieces.
- peas - use fresh or frozen peas.
- eggs - these are a key part of this recipe and are the bulk of this simple frittata recipe.
- seasoning - season the eggs with paprika, salt, and ground black pepper.
- feta cheese - sprinkle feta over the egg mixture before baking, then add a little extra before serving.
You will also need measuring cups and spoons, an ovenproof skillet, cutting board and knife, and a spatula or wooden spoon.
How to Make the Best Asparagus Frittata
- Sauté onion. In a large oven-proof skillet or cast-iron skillet, melt butter for over medium-high heat until bubbly. Add onion and sauté until fragrant, about 1 minute.
- Add asparagus. Add asparagus and cook until tender, about 2-3 minutes.
- Add peas. Add peas and mix well until softened, about 1 minute.
- Whisk eggs. In a large mixing bowl, whisk together eggs, paprika, salt, and pepper until smooth.
- Add to skillet. Pour the egg mixture into the hot skillet and gently tip or shake to distribute. Sprinkle ⅔ cup of feta cheese evenly on top.
- Bake. Transfer skillet into the preheated oven and bake in a 400F preheated oven for 20 minutes until completely set. Optionally, you can broil on High for 6-8 minutes instead until completely set and golden brown on top.
- Rest. Let the frittata rest for 5-10 minutes to stabilize since it will puff up fresh out of the oven.
- Serve. Top with the remaining feta. Slice and serve.
Recipe Variations
- Increase the protein. If you have any leftover baked ham, sprinkle it over the eggs for an asparagus and ham frittata. Cooked breakfast sausage or crumbled bacon would taste delicious, too. You can also substitute egg whites for some of the whole eggs.
- Add more spring vegetables. Take this easy frittata over the top by adding more spring produce! It's so tasty with sliced cherry tomatoes, green onion, diced bell pepper, fresh garlic, sauteed spinach or kale, and more. - Snap the ends. Instead of cutting off the tough ends of the asparagus spears with a knife, use your fingers! The asparagus will naturally break where it begins to turn woody, so you'll only ever remove exactly what needs to go. Very quick and easy!
- Watch the heat. If heated too high, butter will easily brown or burn. If it starts to pop or bubble quickly, you may need to drop the temperature.
- Use leftover roasted asparagus. If you prepare asparagus for dinner the night before, you can use the leftovers the next day to get this easy recipe in the oven even faster.
