Description

This homemade Asparagus Frittata recipe is perfect for your next spring brunch! Made with sautéed asparagus and peas baked with eggs and creamy feta cheese, it's a true celebration of the abundance of the season yet only requires about 30 minutes and a hot skillet. It's the perfect breakfast for Easter, Mother's Day brunch, or any special occasion! 


Ingredients

  • 2 tablespoons butter
  • 1 small onion, diced
  • 1 pound asparagus, ends trimmed and cut into 1-inch pieces
  • 1/2 cup peas, fresh or frozen
  • 6 large eggs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup feta cheese, divided

Instructions

  1. Preheat oven to 400F.
  2. In a large oven-proof skillet or cast-iron skillet, melt butter for over medium-high heat until bubbly. Add onion and sauté until fragrant, about 1 minute.
  3. Add asparagus and cook until tender, about 2-3 minutes. Add peas and mix well until softened, about 1 minute,
  4. In a large mixing bowl, whisk together eggs, paprika, salt, and pepper until smooth. Pour the egg mixture into the hot skillet and gently tip or shake to distribute. Sprinkle 2/3 cup of feta cheese evenly on top.
  5. Transfer the skillet into the preheated oven and bake for 20 minutes until completely set. Optionally, you can broil on High for 6-8 minutes instead until completely set and golden brown on top.
  6. Let the frittata rest for 5-10 minutes to stabilize since it will puff up fresh out of the oven.

  7. Top with the remaining feta. Slice and serve.

Notes

How to store: Let the frittata cool to room temperature, then store the leftovers in an airtight container in the fridge for 3-4 days. 

How to reheat: Reheat leftover frittata by popping a slice in the microwave for 1-2 minutes. Alternatively, you can place the entire dish in the oven to warm up again at 350 degrees F. 

How to freeze: Once refrigerated, leftovers can be frozen for up to 3 months. Transfer the container to the fridge to thaw the night before.
