    Ingredient Notes

    To make this delicious Coconut Maple Walnut Granola, you will need the following ingredients (full measurements in recipe card below):

    • oats - use rolled oats or large flake oats for granola — not quick oats.
    • walnuts - you can buy them whole and chop them yourself or buy them pre-chopped to save time and effort!
    • almonds - use slivered almonds (sliced almonds).
    • pecans - just like the walnuts, you can chop them yourself or use pre-chopped pecans.
    • maple syrup - using processed or artificially flavored maple syrup will change the taste of the granola. You can also use pure honey instead of maple syrup, but note that the recipe will no longer be vegan.
    • coconut oil - avocado oil or vegetable oil will also work.
    • vanilla extract - you can substitute vanilla paste at a 1:1 ratio for a more intense flavor.
    • ground cinnamon - you can omit this if you’re not a fan of cinnamon.

    You will also need measuring cups and spoons, mixing bowl, and a large half sheet baking pan.

    How to Make the Best Coconut Maple Walnut Granola

    1. Combine dry ingredients. In a large mixing bowl, add oats, walnuts, almonds, and pecans and stir to combine. Set aside.

    Add dry ingredients.

    Stir to combine.
    1. Combine wet ingredients. In a medium mixing bowl, add maple syrup, coconut oil, vanilla and cinnamon. Stir well to combine.

    Combine wet ingredients.
    1. Add wet to dry. Pour the wet mixture into the dry ingredients. Use a wooden spoon to stir well until combined.

    Pour wet ingredients into dry ingredients.

    Stir until combined.
    1. Spread. Line a large half sheet baking pan with parchment paper, a silicone baking mat, or aluminum foil. Spread the granola mixture evenly into the prepared baking sheet.

    Transfer granola to baking sheet.

    Spread.
    1. Bake. Bake in a 300F preheated oven for 30 minutes, taking the tray out of the oven every 10 minutes and give the granola a good stir. Re-spread the granola and put it back into the oven.

    Bake and stir.

    1. Cool. Remove the granola from the oven and let cool completely before serving and storing.

    Ingredients

    • 2 cups rolled oats (large flake oats)
    • ½ cup walnuts, chopped
    • ½ cup slivered almonds
    • ¼ cup pecans, chopped
    • ½ cup pure maple syrup
    • ¼ cup coconut oil, melted
    • ½ tablespoon vanilla extract
    • 1 teaspoon ground cinnamon

    Instructions

    1. Preheat oven to 300 F. Line a large half sheet baking pan with parchment paper, a silicone baking mat, or aluminum foil.
    2. In a large mixing bowl, add oats, walnuts, almonds, and pecans and stir to combine. Set aside.
    3. In a medium mixing bowl, add maple syrup, coconut oil, vanilla and cinnamon. Stir well to combine.
    4. Pour the wet mixture into the dry ingredients. Use a wooden spoon to stir well until combined.
    5. Spread the granola mixture evenly into the prepared baking sheet.
    6. Bake for 30 minutes, taking the tray out of the oven every 10 minutes and give the granola a good stir. Re-spread the granola and put it back into the oven.

      Made this tonight. My yogurt is lonely. I made a few additions: Doubled the recipe...
      I used a mix of nuts (pumpkin, sunflower, pecans, slivered almonds, cashews, almonds, and coco-NUT! ), used 2/3 c pure maple syrup and 1/3 c honey, coconut oil, and vanilla. I heated the wet ingredients on med-low just until the coconut oil melted. Mixed it into dry ingredients. Added sweetened coconut and cooked according to instructions. Added golden raisins (or craisins) after removing from oven and allowed to cool. Absolutely delish and my yogurt will be whistling Dixie!

      I did 4 times the recipe...I reduced the amound of walnuts and almonds to add coconut.I've been doing granola for years.!...trying so many recipes. I must say that this recipe is one of the best I did...I can't way for my husband to come home from the woods to try it. He loves the smell...I'm not done cooking all the batches. Thanks for sharing!

      This is a great recipe and now my go-to for our household staple. Shaved coconut is a great addition, and my only other tweak (besides swapping out walnuts for whatever nut I have on hand) is SALT! Salt definitely makes the flavors pop.

      I have made this granola twice now. We just love it !!
      The second time I added hemp hearts and oat bran ( about 1/4 cup of each) and there was still plenty of maple syrup/oil blend. I added raisins and cranberries as a previous person commented on but did this half way through the bake..
      A definite keeper ...

      Absolutely delicious! I added some raisins and dried cranberries after baking too because I love fruity granola.

      My hubby never eats any kind of cereal in the morning, and he sneaked a bowl after he saw me enjoying it. LOL
