- French baguette - you need one baguette sliced into ¼-inch pieces (which should give you about 15-20 slices). Use store-bought to make life easier, or try your hand at making your own Homemade French Baguettes.
- figs - you will need fresh figs.
- goat cheese - you could substitute this with feta cheese, ricotta, or a vegan cheese that is easy to spread.
- pistachios - you could top these crostini with any nuts you have on hand (toasted to bring out the flavour!), but honestly I love the pop of colour the pistachios bring to this dish.
- olive oil
- salt and pepper
- balsamic vinegar or honey - If you have a sweet tooth, drizzle a bit of honey on the finished crostini. If, however, you’re more like me and prefer a bit of contrast, balsamic vinegar is the way to go! OR better yet, a balsamic glaze -- try making your own (grab the super easy recipe here!). You can’t imagine how good these taste, and I guarantee they will disappear quickly!
How to Make the Best Fig Crostini with Goat Cheese and Pistachios
- Toast the baguette. Place as many pieces of sliced baguette on a rimmed quarter sheet baking pan as you can fit. Drizzle with olive oil and salt. Bake in a 375 F preheated oven until crispy, about 5-7 minutes. Let cool for 10 minutes.
- Assemble the crostini. Using a small spatula, spread about 1 tablespoon goat cheese on each crostini, covering most of the bread. Layer quartered figs on top of goat cheese. Sprinkle with toasted pistachios and season with a little sea salt and black pepper on each crostini.
- Serve. Drizzle with balsamic vinegar or honey (or both!). Serve immediately.

- How to pick the best figs: When selecting figs at your local grocery store or farmer's market, make sure to pick ones that are plump and soft, with smooth skin (no cracks) and their stems still on.
- How to store fresh figs: Store fresh figs in the refrigerator for up to 3-4 days.
- Make ahead? I would not recommend making these ahead as the creamy cheese will cause the toasted baguettes to start getting soggy if assembled and stored too long.

Oh these looks so good! I dont really like goat cheese but I can definitely make these with brie and the fig would be great!
