    It is finally starting to feel like spring around here. Days are getting longer, birds are chirping, sun is shining... and to top it off, I am finally back home for good after completing a 6-month work contract in a town 2 hours away. Meaning, I can see my hubby all week long (not just on weekends) and I can start hosting some get-togethers at our place.     That is right, I am sharing four recipes today. I told you I was in a good mood! So, there is a recipe in there for everyone. I got a couple of savory recipes and a couple of sweet ones, whatever suits your palate.

    My classic, go-to snack has always been RITZ Crackers paired with cream cheese. I pretty much lived on this stuff as a bedtime snack when I was a child. But now, you can say that a remixed version of this snack exists in my life. By remix, I mean the addition of extra ingredients to bring a bit more life into this snack. I'm talking ingredients such as cheddar cheese, jalapeño peppers, smoked salmon, arugula, nutella, and strawberries.

    I know, I know, the curiosity and anticipation is too much. Wait no longer, here are my top four sweet and savory RITZ Cracker recipes.

    The Crackers:

    1. Smoked Salmon, Cucumber and Cream Cheese Bites
    2. Jalapeño Popper Topper
    3. Nutella and Peanut Butter Explosion
    4. RITZ Strawberry Cheesecake Bites

    The best part of all? Each of these bites takes about 5 minutes to put together (with the exception of the nutella and peanut butter explosion recipe which may take a few extra minutes to pipe out the peanut butter). Basically, with 20 minutes, a few boxes of RITZ Crackers, cream cheese and a few extra ingredients (all of which you can pick up at your local Safeway), you are ready to host all the parties that your heart desires!

    Description

    Take the stress out of party planning and serve something sweet or savory with these four quick and easy RITZ Cracker recipes.


    Ingredients

    Smoked Salmon, Cucumber and Cream Cheese Cracker:

    • 24 RITZ Crackers
    • 4 oz. brick cream cheese, softened
    • ½ large cucumber, sliced
    • 1 cup smoked salmon, cut into 1-inch pieces
    • ¼ cup arugula

    Jalapeño Popper Topper:

    • 36 RITZ Crackers
    • 4 oz. brick cream cheese, softened
    • ½ cup shredded Mexican cheese blend
    • 3 jalapeño peppers, each cut into 12 thin slices

    Nutella and Peanut Butter Explosion:

    • 24 RITZ Crackers
    • 4 oz. brick cream cheese, softened
    • ½ cup nutella
    • 3 tablespoons peanut butter
    • 2 tablespoons chopped peanuts

    RITZ Strawberry Cheesecake Bites:

    • 24 RITZ Crackers
    • 4 oz. brick cream cheese, softened
    • ½ cup strawberry pie filling

    Instructions

    Smoked Salmon, Cucumber and Cream Cheese Cracker:

    1. Spread cream cheese onto crackers.
    2. Add a slice of cucumber.
    3. Add a piece of smoked salmon on top.
    4. Add arugula.

    Jalapeño Popper Topper:

    1. Mix first 2 ingredients until blended.
    2. Spread onto crackers.
    3. Top with peppers.

    Nutella and Peanut Butter Explosion:

    1. Blend cream cheese and nutella together.
    2. Spread mixture onto crackers.
    3. Pipe a drizzle of peanut butter on top.
    4. Top with chopped peanuts.

    RITZ Strawberry Cheesecake Bites:

    1. Spread crackers with cream cheese.
    2. Top with pie filling.

      ooo I don't know which I'd choose! I think I'd go for that smoked salmon one, but my husband would definitely request the jalapeno! 😉
