Do you know what the easiest bites to make are? I do. It's called smoked salmon and cream cheese cracker bites. It takes literally 10 minutes to make and about 5 minutes to eat! I probably eat about a dozen of them while I am making them. I mean.. come on! Cream cheese spread over a thin crunchy cracker topped with refreshing cucumber, smoked salmon and spicy arugula. How can you not?
So next time you are stressed out figuring out what snacks to serve at a party, it will be a no-brainer. Smoked salmon and cream cheese cracker bites. This recipe makes 24 crackers so of you are like me and snack on them while you are preparing them, then I would suggest doubling or even tripling the recipe because 24 crackers doesn't go too far.
The best thing about this recipe is that you are not going to spend all day in the kitchen slaving away. It takes about 10 minutes to spread on cheese and top with sliced cucumber, smoked salmon and arugula. Get the kids to help out and set up a mini assembly line. You may actually be done faster than you can eat these! 🙂

Ingredients
- 24 crackers (I used RITZ crackers)
- 4 oz. brick cream cheese, softened
- ½ large cucumber, sliced
- 1 cup smoked salmon, cut into 1-inch pieces
- ¼ cup arugula
Instructions
- Spread cream cheese onto crackers.
- Add a slice of cucumber.
- Add a piece of smoked salmon on top.
- Add arugula.
