Description

Quick and easy roasted cauliflower is a delicious, flavourful side dish that you throw on a sheet pan and into the oven. Plus, it's vegan and gluten-free.

Ingredients

  • 1 medium head cauliflowerbroken into florets (about 5-6 cups)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat oven to 425 F.
  2. Combine all ingredients into a large bowl or directly into a sheet pan. Toss to combine.
  3. Roast in the oven for 25-30 minutes.

Notes

Equipment used: mixing bowl and baking sheet pan.

How to serve: Serve roasted cauliflower as a side dish with your favourite fall meals. I like to pair it with easy juicy roasted turkey breast, some easy roasted brussels sprouts and an apple walnut salad. Add don't forget to add it to your easy Thanksgiving menu. A side dish this easy will be a life-saver on the big day when you have a million other things to stress over.

How to use roasted cauliflower in soup: Some of my favourite ways to use roasted cauliflower are in roasted butternut squash and cauliflower soup and creamy cauliflower and garlic soup. The cauliflower in this recipe is caramelized in a pot, but you can easily adapt it and use roasted cauliflower instead.

How to make mashed cauliflower: Turn roasted cauliflower into garlic mashed cauliflower. The cauliflower in that recipe is boiled, but again you can adapt the recipe and use roasted cauliflower instead. It will add an amazing layer of flavour.
