Ingredients

For the chicken:

  • 2 large boneless and skinless chicken breasts, sliced in half horizontally
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil

For the sauce:

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 tablespoons garlic, minced
  • 1/2 tablespoon all-purpose flour
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 teaspoon paprika
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, finely chopped
  • salt and pepper (to taste)

Instructions

  1. Use a paper towel to pat the chicken breasts completely dry. Season both sides with salt and pepper. Set aside for 5 minutes.
  2. Heat oil in a large cast-iron skillet over medium-high heat. Add chicken and cook for 5-6 minutes on each side until cooked through. Remove chicken and set aside on a plate.
  3. In the same pan, melt butter and sauté onion and garlic until tender, about 2 minutes.
  4. Stir in flour and cook until smooth, about 1 minute.
  5. Add broth and heavy cream. Mix well and bring the sauce to a simmer. Simmer until thickened to a desired consistency, about 4-5 minutes.
  6. Add paprika, lemon juice, parsley, salt, and pepper. Stir until evenly combined.
  7. Return the chicken to the skillet. Toss well to coat and cook until warmed through, about 2-3 minutes. Serve immediately.
