Ingredients
- 1 1/2 pounds green beans, ends trimmed
- 1/2 pound bacon strips, cut into 2-inch pieces
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon balsamic vinegar
- 1/4 teaspoon salt (or to taste)

Instructions
- Bring a large pot of salted water to a boil. Add green beans and cook until tender, about 3-4 minutes. Drain under cold running water for a minute and set aside.
- Add bacon to a large skillet and cook over medium-high heat until browned on both sides and crisp, about 3-4 minutes. Leave the bacon fat in the skillet and transfer the bacon onto a plate.
- In the same pan, add onion and garlic and sauté until fragrant, about 1 minute.
- Stir in the blanched green beans and cook until warmed through, about 1-2 minutes. Stir well to coat.
- Return the bacon to the skillet and add balsamic vinegar, salt, and pepper. Toss to combine and cook for one more minute. Serve immediately.
Notes
How to store: Allow the sautéed green beans with bacon to cool to room temperature first, the place them an airtight container refrigerate for up to 4 days. Reheat on the stove over medium-low heat until warmed through.
How to freeze: You can also freeze this side dish! Spread the leftover green beans and bacon on a parchment-lined half sheet baking pan and freeze for 2 hours, then transfer it a freezer bag and freeze for up to 3 months. You can reheat straight from the freezer by sautéing until heated and crisp or baking at 450℉ for 10-15 minutes. You can also air fry leftovers at 400℉ for 7-12 minutes until warmed through.
