Description

Air fryer vegetables are healthy, flavorful, and delicious. This vegan side dish is quick and easy to make in the air fryer in under 15 minutes.


Ingredients

  • 2 cups cauliflower florets
  • 1 medium zucchini, sliced
  • 2 cups asparagusends trimmed and cut into 1.5-inch pieces
  • 1 cup shiitake mushrooms, halved
  • 1 tablespoon fresh garlicfinely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon soy sauce
  • 1 teaspoon balsamic vinegar 
  • 1/4 teaspoon salt (or more to taste)
  • 1/4 teaspoon ground black pepper (or to taste)

Instructions

  1. In a large mixing bowl, add cauliflower, zucchini, asparagus, shiitake mushrooms, and garlic. Drizzle with olive oil and season with Italian seasoning, soy sauce, balsamic vinegar, salt, and pepper. Toss to combine until well coated.
  2. Transfer seasoned vegetables to air fryer basket. Air fry at 375F for 15 minutes, shaking the pan halfway through cooking. 
    • For crispier vegetables, arrange them in a single layer and cook in batches. 

Notes

How to store: Store air fryer vegetables in an airtight container for up to 4 days in the refrigerator.

How to reheat: Reheat roasted veggies in the air fryer or oven at 300F for 3-5 minutes until warmed through. You can also reheat on the stove over medium heat until warmed through.
