Description

Rich, chocolatey Fudgy Zucchini Brownies made in one bowl with shredded zucchini for the fudgiest texture. No one will guess there's a vegetable inside!


Ingredients

  • 1½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • 1⅓ cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups finely shredded zucchini, lightly packed (about 1 medium zucchini) — do not squeeze out moisture
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat the oven to 350°F. Grease and line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, whisk together the vegetable oil, sugar, and vanilla until well combined.
  4. Add the dry ingredients to the wet ingredients and stir until the mixture is thick and crumbly. Fold in the shredded zucchini and continue mixing for 1 to 2 minutes until the zucchini releases its moisture and the batter comes together into a thick, spreadable batter. Fold in the chocolate chips, if using.
  5. Spread the batter evenly into the prepared pan. Bake for 30 to 35 minutes, until the center is set and a toothpick inserted into the middle comes out with a few moist crumbs.
  6. Let the brownies cool completely in the pan before lifting them out and slicing into squares.

Notes

Storage: Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
