Quick and easy, homemade vegetarian ramen is packed with fresh vegetables, noodles, and authentic flavours. It's ready in just 15 minutes!

INGREDIENTS

– sesame oilginger + garlicsoy saucemirin or rice vinegarvegetable stockvegetableseggsramen noodlesgreen onions sesame seeds 

Sauté ginger and garlic. Add soy sauce and mirin. Add stock and simmer for 5 minutes.

Add shiitake mushrooms and simmer for 10 minutes. Meanwhile make the ramen eggs.

Add ramen noodles to the soup, and cook for 2-3 minutes. Blanch cook the spinach.

Divide into soup bowls and top with eggs, spinach, carrots, green onions, and sesame seeds.
