– sesame oil – ginger + garlic – soy sauce – mirin or rice vinegar – vegetable stock – vegetables – eggs – ramen noodles – green onions – sesame seeds
Sauté ginger and garlic. Add soy sauce and mirin. Add stock and simmer for 5 minutes.
Add shiitake mushrooms and simmer for 10 minutes. Meanwhile make the ramen eggs.
Add ramen noodles to the soup, and cook for 2-3 minutes. Blanch cook the spinach.
Divide into soup bowls and top with eggs, spinach, carrots, green onions, and sesame seeds.
