Description

Vegetarian Baked Ziti layers pasta, a hearty mushroom marinara sauce, creamy ricotta, and melted mozzarella for a rich, meatless pasta bake.


Ingredients

  • 1 pound (454 grams) ziti pasta
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 8 ounces cremini mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 4 cups marinara sauce
  • 1 tablespoon Italian seasoning
  • 5 ounces baby spinach
  • 15 ounces whole milk ricotta cheese
  • 1 cup Parmesan cheese, freshly grated, divided
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup fresh basil, chopped
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon ground black pepper (or to taste)
  • 3 cups fresh mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 375°F.
  2. Bring a large pot of salted water to a boil over medium-high heat. Add the pasta and cook until al dente according to the package directions. Drain well and set aside.
  3. Meanwhile, heat the olive oil in a large pot or 4-quart Dutch oven over medium-high heat. Add the onion and mushrooms and sauté until the vegetables are tender and the mushrooms have released and cooked off most of their moisture, about 6 to 8 minutes. Stir in the garlic and cook for 1 minute until fragrant.
  4. Pour in the marinara sauce and stir in the Italian seasoning. Bring the sauce to a gentle simmer over medium heat.
  5. Stir in the spinach a handful at a time until completely wilted, about 1 to 2 minutes.
  6. Stir in ½ cup Parmesan cheese, parsley, and basil. Season with the salt and pepper. Reduce the heat to low and simmer for 5 minutes, stirring occasionally.
  7. In a medium bowl, combine the ricotta cheese and ¼ cup Parmesan cheese until smooth.
  8. Add the cooked pasta to the sauce and toss until evenly coated.
  9. Spread half of the pasta mixture into a greased 9x13-inch baking dish. Dollop half of the ricotta mixture over the pasta and gently spread it into an even layer. Sprinkle with 1½ cups mozzarella cheese. Repeat with the remaining pasta, ricotta mixture, remaining mozzarella, and the remaining ¼ cup Parmesan cheese.
  10. Bake for 25 to 30 minutes, until the cheese is melted, bubbly, and lightly golden.
  11. Let the baked ziti rest for 10 to 15 minutes before serving.

Notes

Storage: Refrigerate leftovers in an airtight container for up to 4 days, or freeze (baked or unbaked) for up to 3 months. Reheat individual portions in the microwave for 1 to 2 minutes, or in a 350°F oven loosely covered with foil for 15 to 20 minutes.
