Description
Tuscan Chickpea Soup is a creamy, hearty one-pot soup made with chickpeas, sun-dried tomatoes, spinach, and Parmesan cheese.
Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano (or Italian seasoning)
- ½ teaspoon crushed red pepper flakes (optional)
- 2 tablespoons tomato paste
- ⅓ cup oil-packed sun-dried tomatoes, drained and chopped
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 4½ cups vegetable broth
- ½ cup heavy cream
- 3 cups baby spinach
- ¼ cup Parmesan cheese, freshly grated
- 1 tablespoon fresh lemon juice
- salt and black pepper (to taste)
- fresh basil (for serving)
Instructions
- Heat the olive oil in a large Dutch oven over medium heat. Add the onion, carrots, and celery. Cook until softened, about 6 to 8 minutes. Stir in the garlic, oregano, and crushed red pepper flakes, if using, and cook for 1 minute, until fragrant.
- Stir in the tomato paste and cook for 1 minute, stirring frequently until it darkens slightly.
- Stir in the sun-dried tomatoes, chickpeas, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Transfer about 2 cups of the soup to a blender and blend until smooth. Stir it back into the pot.
- Reduce the heat to low and stir in the heavy cream, spinach, and Parmesan cheese. Cook until the spinach is wilted and the cheese has melted, about 2 to 3 minutes. Stir in the lemon juice and season with salt and pepper to taste.
- Ladle into bowls and garnish with fresh basil and additional Parmesan cheese, if desired.
Notes
Storage: Refrigerate leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
Slow Cooker instructions: Sauté vegetables and spices first, then slow cook with remaining soup ingredients on low 6 to 8 hours or high 3 to 4 hours, stirring in cream, spinach, and Parmesan near the end.
Instant Pot instructions: Sauté vegetables and spices, add sun-dried tomatoes, chickpeas, and broth, cook on high pressure 8 minutes with a 10-minute natural release, then stir in cream, spinach, and Parmesan.
