Description

This Tater Tot Casserole is classic comfort food that incorporates delicious layers of flavors and textures to please the entire family. In every bite, warm and crispy tater tots with soft centers give way to melted cheese and a creamy mixture of beef and vegetables. This easy to prep casserole is perfect for family dinners on busy weeknights or any day of the week!


Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground beef  
  • 1 medium onion, diced 
  • 2 cloves garlic, finely chopped
  • 2 cups frozen mixed vegetables
  • 1 tablespoon tomato paste  
  • 1 tablespoon Worcestershire sauce 
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (10.5 ounce) can condensed cream of mushroom soup 
  • 3 cups cheddar cheese, shredded
  • 1 (24 ounce) package frozen tater tots (3 cups), not thawed

Instructions

  1. Preheat oven to 375F.
  2. Heat oil in a large skillet over medium-high heat for 1 minute. Add ground beef and cook until browned evenly, about 5-7 minutes. Use a spatula to break the beef into small pieces to help with even browning. 
  3. Add onion and garlic and sauté until tender, about 2 minutes. 
  4. Add frozen vegetables, tomato paste, and Worcestershire sauce and stir until well combined. Season with salt and pepper.
  5. Transfer the beef mixture to a 3 quart oval/round baking dish (or 9x13-inch casserole dish) and spread evenly. If you are using an oven-safe skillet then skip this step as you can bake with the same skillet.
  6. Pour the condensed mushroom soup evenly over the beef mixture. Add a layer of cheddar cheese and a final layer of tater tots arranged symmetrically and evenly on top.
  7. Bake for 40-45 minutes until golden brown and cheese has melted completely and sauce is bubbly. Allow the casserole to rest for 5 minutes and serve warm.

Notes

How to store: Once the tater tot casserole has cooled completely, cover the pan tightly with plastic cling wrap or transfer leftovers to an airtight container and refrigerate for up to 5 days.

How to reheat: Reheat leftovers in the oven at 350℉ for 20-30 minutes or until warmed through.

How to freeze: Transfer to a freezer-safe container and wrap tightly in plastic cling wrap and a layer of aluminum foil before freezing for up to 3 months. Allow it to thaw in the refrigerator overnight before reheating and serving.
