Description

Pecan Pie Muffins are soft, moist muffins packed with toasted pecans and rich brown sugar flavor, all the taste of pecan pie without the crust.


Ingredients

  • 1¾ cups (190 grams) pecans, roughly chopped, divided
  • 1½ cups (180 grams) all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (200 grams) dark brown sugar, packed
  • ½ cup (113 grams) unsalted butter, melted and slightly cooled
  • 2 large eggs
  • ¾ cup (180 grams) sour cream
  • ¼ cup (60 ml) whole milk
  • 2 teaspoons vanilla extract
  • coarse sugar, for topping (optional)

Instructions

  1. Preheat the oven to 375°F. Line a standard 12-cup muffin pan with paper liners.
  2. Spread 1½ cups of the chopped pecans on a baking sheet and toast for 5 to 7 minutes, until fragrant and lightly browned. Set aside to cool.
  3. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, whisk together the dark brown sugar, melted butter, eggs, sour cream, milk, and vanilla until smooth and well combined.
  5. Add the dry ingredients to the wet ingredients and stir until just combined. A few small streaks of flour are fine.
  6. Fold in the toasted chopped pecans, being careful not to overmix.
  7. Divide the batter evenly between the 12 muffin cups, filling each about three-quarters full.
  8. Sprinkle the remaining ¼ cup chopped pecans evenly over the muffins. Sprinkle lightly with coarse sugar, if desired.
  9. Bake for 18 to 22 minutes, until the muffins are risen and golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire cooling rack.
