Mediterranean dense bean salad packed with chickpeas, vegetables, feta, and lemon dressing. Healthy meal prep salad full of fresh flavor.


Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (15-ounce) can white beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • ½ cup cucumber, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped

For the dressing:

  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. In a large serving bowl, combine chickpeas, white beans, and kidney beans.
  2. Add in cucumber, cherry tomatoes, red onion, feta cheese, and parsley.
  3. In a small mixing bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, salt, and pepper until smooth.
  4. Pour the dressing over the salad and toss well to combine.
  5. Serve immediately or refrigerate for at least 30 minutes before serving to allow the flavors to develop.
