Description

Creamy Lemon Orzo is an easy one-pot side dish made with Parmesan, garlic, butter, and fresh lemon. Ready in just 20 minutes and full of bright flavor.


Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1½ cups dry orzo pasta, uncooked
  • 3 to 3 ½ cups vegetable stock (as needed)
  • 1 tablespoon butter
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon lemon zest (from 1 lemon)
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon ground black pepper (or to taste)
  • pinch of red pepper flakes (optional)
  • 1 tablespoon fresh parsley, finely chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and uncooked orzo, stirring frequently for 1-2 minutes until lightly toasted and fragrant.
  2. Pour in 3 cups of vegetable stock, reserving the remaining ½ cup if needed near the end of cooking. Stir well and bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce heat to low and cover, leaving the lid slightly ajar. Simmer for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed. Add a splash more broth if needed.
  4. Remove from heat and stir in butter, Parmesan cheese, lemon zest, lemon juice, salt, pepper, and red pepper flakes, if using. Stir until creamy and well combined.
  5. Garnish with fresh parsley, freshly grated Parmesan, and extra lemon zest if desired.

Notes

How to store: Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze in a freezer-safe container for up to 2 months and thaw overnight before reheating.

How to reheat: Reheat gently on the stovetop or in the microwave with a splash of broth or water to loosen the sauce. Leftovers will continue to absorb liquid as they chill. Add a little broth or water when reheating to restore the creamy consistency.

For serving: If the orzo becomes too thick, stir in a splash of warm broth before serving.
