Description
Homemade fudgesicles that are rich, creamy, and loaded with chocolate flavor. An easy frozen dessert perfect for hot summer days.
Ingredients

- 1/2 cup unsweetened cocoa powder
- 1/3 cup granulated sugar
- 1 tablespoon cornstarch
- a pinch of sea salt
- 1 3/4 cups whole milk (or 1 can (13.5 ounce) full-fat coconut milk)
- 1/4 cup heavy cream
- 1/4 cup semi-sweet chocolate, coarsely chopped
- 1/2 teaspoon vanilla extract
Instructions
- In a medium saucepan, whisk together cocoa powder, sugar, cornstarch, and salt until evenly combined.
- Slowly pour in the milk while whisking continuously until smooth and no lumps remain.
- Heat the mixture over medium-low heat, whisking constantly, until it begins to simmer and slightly thickens, about 4-5 minutes. Do not boil.
- Remove from heat and stir in heavy cream, chocolate, and vanilla extract. Mix until the chocolate is fully melted and the mixture is smooth and glossy.
- Let the mixture cool for 10-15 minutes.
- Pour into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks.
- Freeze for at least 6 hours, or overnight for best results.
- To release, run the molds under warm water for 15-20 seconds before gently removing the fudgesicles. Serve immediately.
- Add toppings (optional). For an extra special treat, drizzle the fudgesicles with melted chocolate and sprinkle with chopped nuts, mini chocolate chips, shredded coconut, crushed cookies, or colorful sprinkles. Let the chocolate set for a minute or two before serving.
Notes
How to store: Keep the fudgesicles in their molds or transfer them to a freezer-safe container or zip-top bag once fully frozen. Homemade fudgesicles will keep well in the freezer for up to 2 months.
