Ingredients
- 2 pounds carrots, washed and tops trimmed
- 1 1/2 tablespoons avocado oil
- 4 cloves garlic, finely chopped
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1/2 cup Parmesan cheese, grated, divided
Instructions
- Preheat oven to 400 F.
- In a large mixing bowl, add carrots, avocado oil, garlic, Italian seasoning, salt, pepper and 1/3 cup of Parmesan cheese. Toss well until evenly coated.
- Arrange the carrots in a single layer on the pan and bake for 25- 30 minutes until tender. Flip once halfway through baking to cook evenly.
- Serve immediately and top with the remaining Parmesan cheese.
