Description

  • 8 slices soft white bread or sandwich bread
  • 1 large English cucumber, thinly sliced
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper


Instructions

  1. Arrange the cucumber slices in a single layer on paper towels. Lightly sprinkle with a pinch of salt and let sit for 10 to 15 minutes to draw out excess moisture. Pat dry with additional paper towels.
  2. In a small mixing bowl, combine the cream cheese, mayonnaise, dill, chives, lemon juice, salt, and pepper. Mix until smooth and creamy.
  3. Lay the bread slices on a clean work surface. Spread the cream cheese mixture evenly over each slice of bread.
  4. Arrange the cucumber slices in a slightly overlapping layer over half of the bread slices.
  5. Top with the remaining bread slices, cream cheese side down, and gently press together.
  6. Optional: Refrigerate the assembled sandwiches for 15 to 20 minutes for cleaner slices.
  7. Using a sharp serrated knife, trim away the crusts. Cut each sandwich into rectangles, triangles, or small squares.
  8. Serve immediately or refrigerate until ready to enjoy.
