Description
Cowboy Caviar is a fresh bean and corn salad made with black beans, black-eyed peas, avocado, and a zesty lime dressing. Perfect as a dip or side dish.
Ingredients
For the cowboy caviar:
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can black eyed peas, rinsed and drained
- 1 ½ cups corn kernels, fresh, frozen and thawed, or canned and drained
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- ¼ cup red onion, finely diced
- 1 jalapeño pepper, finely diced
- 1/3 cup fresh cilantro, chopped
For the dressing:
- ¼ cup olive oil
- ¼ cup fresh lime juice
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- 1 clove garlic, minced
- ½ teaspoon ground cumin (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a large mixing bowl, combine the black beans, black eyed peas, corn, cherry tomatoes, bell pepper, red onion, jalapeño, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, honey, garlic, salt, and black pepper until well combined.
- Pour the dressing over the bean mixture and toss gently until evenly coated.
- Fold in the diced avocado just before serving to keep it fresh and creamy.
- Cover and refrigerate for at least 30 minutes (or up to 8 hours) before serving for the best flavor.
- Serve chilled with tortilla chips, as a dip, spooned over tacos, grilled chicken, burgers, fish, or as a fresh side salad.
Notes
How to store: Store leftover Cowboy Caviar in an airtight container in the refrigerator for up to 3 days. The vegetables will soften slightly over time, and the avocado may begin to brown, but the salad will still taste delicious. If possible, store any leftover avocado separately and stir it in just before serving.
Make ahead instructions: You can prepare the salad and dressing up to one day in advance and refrigerate them together to allow the flavors to meld. For the freshest texture and appearance, wait to stir in the diced avocado until just before serving.
