Description

Beer Battered Onion Rings are crispy, golden, and easy to make with a light beer batter. The perfect appetizer or side dish for any occasion.


Ingredients

  • 2 large sweet onions, such as Vidalia or Walla Walla
  • 1 ½ cups all-purpose flour, divided
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cold beer, lager or pilsner works best
  • vegetable oil (for frying)


Instructions

  1. Peel the onions and cut them into ½-inch thick rounds. Separate the slices into individual rings and place them in a large bowl.
  2. Place ½ cup of the flour into a shallow bowl. Toss the onion rings in the flour until lightly coated, then shake off any excess. This helps the beer batter stick to the onions.
  3. In a large mixing bowl, whisk together the remaining 1 cup flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper.
  4. Slowly pour in the cold beer while whisking until a smooth batter forms. A few small lumps are perfectly fine. The batter should be thick enough to coat the back of a spoon. Let the batter rest for 5 to 10 minutes while the oil heats.
  5. Fill a large Dutch oven or heavy-bottomed pot with about 2 inches of vegetable oil. Heat the oil over medium-high heat until it reaches 375°F on a deep-fry or instant-read thermometer.
  6. Working with a few onion rings at a time, dip each floured onion ring into the beer batter, turning to coat completely. Lift it out and let any excess batter drip back into the bowl.
  7. Carefully lower the battered onion rings into the hot oil. Fry in batches for 2 to 3 minutes per side, turning occasionally, until deep golden brown and crispy. Avoid overcrowding the pot, and allow the oil to return to 375°F between batches.
  8. Transfer the fried onion rings to a wire rack set over a baking sheet to drain. This keeps them crisp while the remaining batches cook.
  9. While still hot, sprinkle the onion rings with a little additional salt. Serve immediately with ranch dressing, spicy mayo, barbecue sauce, honey mustard, or your favorite dipping sauce.

Notes

Storage: Store cooled onion rings in an airtight container in the refrigerator for up to 3 days.

Reheating: Reheat in a 375°F air fryer for 3 to 5 minutes or a 400°F oven for 8 to 10 minutes until hot and crispy.

Freezing: Freeze cooked onion rings for up to 2 months. Reheat directly from frozen in the oven or air fryer until heated through and crispy.
