Ingredients
Scale
- 2 medium ripe bananas
- 2 cups (480 ml) milk of choice
- ⅓ cup (55 grams) chia seeds
- 1 tablespoon maple syrup or honey (optional)
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon

Optional toppings:
- banana, sliced
- walnuts or pecans, chopped

- peanut butter or almond butter
Instructions
- In a blender, combine bananas, milk, maple syrup, vanilla extract, cinnamon, and salt. Blend until completely smooth.
- Pour the mixture into a large bowl or container.
- Add the chia seeds and whisk thoroughly until evenly distributed.
- Let sit for 5 minutes, then whisk again to break up any clumps.
- Cover and refrigerate for at least 4 hours, or overnight, until thick and pudding-like.
- Stir well before serving. If the pudding is thicker than desired, stir in a splash of milk.
