Description

Banana Chia Pudding is a creamy, naturally sweetened make-ahead breakfast made with ripe bananas, chia seeds, and warm cinnamon. No cooking required.


Ingredients

  • 2 medium ripe bananas
  • 2 cups (480 ml) milk of choice
  • ⅓ cup (55 grams) chia seeds
  • 1 tablespoon maple syrup or honey (optional)
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • pinch of salt

Optional toppings:

  • banana, sliced
  • walnuts or pecans, chopped
  • granola
  • shredded coconut
  • peanut butter or almond butter

Instructions

  1. In a blender, combine bananas, milk, maple syrup, vanilla extract, cinnamon, and salt. Blend until completely smooth.
  2. Pour the mixture into a large bowl or container.
  3. Add the chia seeds and whisk thoroughly until evenly distributed.
  4. Let sit for 5 minutes, then whisk again to break up any clumps.
  5. Cover and refrigerate for at least 4 hours, or overnight, until thick and pudding-like.
  6. Stir well before serving. If the pudding is thicker than desired, stir in a splash of milk.
  7. Divide into serving bowls or jars. Top with sliced banana, nuts, granola, coconut, or a drizzle of nut butter, if desired. Serve chilled.
