Ingredients

  • 1 (24 ounce) package tater tots (3 cups), frozen, not thawed
  • 1 1/2 cups diced ham
  • 1 cup cheddar cheese, shredded
  • 8 large eggs
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup mozzarella cheese, shredded
  • ¼ cup chives, chopped


Instructions

  1. Preheat oven to 375F. Grease a 9x13-inch casserole dish with butter or spray with cooking oil spray.
  2. Add tater tots, diced ham and cheddar cheese. Mix until evenly combined.
  3. In a medium mixing bowl, whisk together eggs, mayonnaise, milk, salt, and pepper until smooth.
  4. Pour egg mixture evenly over tater tot mixture. Top with mozzarella cheese.
  5. Bake until golden brown and the egg mixture is completely set, 40 to 45 minutes.
  6. Sprinkle chives on top and serve.
