Description

Grinch Cookies are soft, chewy green sugar cookies rolled in sparkly sugar and topped with a red heart. The cutest Christmas cookies for holiday baking.


Ingredients

  • 2 ½ cups (320 grams) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup (227 g) unsalted butter, softened
  • 1 ¼ cups (250 grams) white sugar
  • 1 large egg, room temperature
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • green food coloring, to desired color intensity
  • 16 heart sprinkles
  • 1/2 cup (100 grams) white sugar (for rolling)


Instructions

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together flour, baking powder, and salt until well combined. Set aside.
  3. In another large mixing bowl, beat the softened butter and white sugar with an electric hand mixer until light and fluffy, about 3 minutes.
  4. Add the egg, egg yolk, vanilla extract, and green food coloring. Beat again until the mixture is smooth, fluffy, and evenly tinted.
  5. Add the dry mixture to the wet mixture and beat again until a uniform cookie dough forms.
  6. Using a medium cookie scoop, portion the dough and roll each piece in white sugar. Arrange the cookies evenly on the prepared baking sheets.
  7. Bake for 11-12 minutes, until the edges are just set and the cookies look slightly puffed.
  8. Press one heart sprinkle into the center of each cookie while they are still warm from the oven.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

How to store: Store cooled cookies in an airtight container at room temperature for up to 4 days. They stay soft and chewy for several days.

How to reheat: Warm in the microwave for 5-8 seconds for that fresh from the oven softness.
