Ingredients
- 2 heads romaine lettuce (or mixed greens)
- 1/4 cup red onion, sliced
- 2 cups grape tomatoes (or cherry tomatoes), halved
- 1 medium English cucumber, sliced
- 1 yellow bell pepper, sliced
- 1/4 cup feta cheese, crumbled (optional)
For the dressing:
- 1/3 cup balsamic vinegar
- 1/4 cup extra virgin oliveoil
- 2 tablespoons dijon mustard
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- In a large serving bowl, combine all the salad ingredients including lettuce, red onion, tomatoes, cucumber, bell pepper, and feta, if using.
- In a small mixing bowl, mix together all the dressing ingredients (including balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper) until smooth.
- Drizzle the dressing over the salad and toss to combine. Serve immediately.
Notes
How to store: Transfer any leftover salad (without dressing, if possible) to an airtight container and refrigerate for up to 2 days. If the salad is already dressed, it’s best enjoyed within 24 hours.
