Ingredients
For the cranberry sauce*:
- ½ cup orange juice
- 1 cup granulated sugar
- 12 ounces cranberries (1 bag), fresh or frozen
* or substitute with 2 cups cranberry sauce
For the whipped feta:
- 1 block (8 ounces) feta cheese
- ½ cup cream cheese (or Greek yogurt)
- 2 tablespoons extra virgin olive oil
For serving (optional):
- 2 tablespoons pistachios, chopped
- 1 teaspoon crushed red pepper flakes
- 1 tablespoon honey
Instructions
Make the cranberry sauce:
- In a medium saucepan, add orange juice, sugar, and cranberries. Stir well and bring to a boil. Turn the heat down to low and simmer for 10 minutes until most of the cranberries burst.
- Once the cranberries have burst, stir constantly and mash with the back of a spoon until the sauce has thickened to a desired consistency.
- Let cool to room temperature, about 15-20 minutes.
Make the whipped feta:
- In a food processor or blender, add feta cheese, cream cheese, and oil in and process until smooth. If the texture is too thick, add in 1 teaspoon of water at a time until desired consistency is reached.
Assemble:
- Transfer the whipped feta to a serving bowl. Use the back of a spoon to create a swirl pattern. Add the cooled cranberry sauce on top.
- Sprinkle chopped pistachios and crushed red pepper flakes on top and add a drizzle of honey (if using).
- Serve with crackers, pita chips, crostini, or fresh veggies.
Notes
How to store: If you have any leftovers, simply cover the cranberry feta dip tightly with plastic wrap or transfer it to an airtight container. Store it in the fridge for up to 3-4 days. Before serving again, let the dip sit at room temperature for about 15-20 minutes to soften, making it easier to scoop and spread. It’s just as delicious the next day (if not better!) since the flavors have more time to meld together.
